Whip up a hearty and flavorful stir-fried squid dish using fresh ingredients from your refrigerator! The crisp texture and mild spiciness of the Korean green peppers (gwari-gochu) combined with the sweetness of the onions create a wonderful harmony. Feel free to add other vegetables you have on hand, like king oyster mushrooms and carrots, to make your meal even more satisfying. Main Ingredients

  • 1 Squid (cleaned and cut into large pieces)
  • 3 King Oyster Mushrooms (sliced for easy eating)
  • 1/3 Carrot (thinly julienned)
  • 1 Onion (thickly sliced)
  • 200g Korean Green Peppers (ends trimmed, halved)

Seasoning Sauce

  • 1 Tbsp Cooking Oil
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Soy Sauce (for seasoning)
  • 1 Tbsp Fish Sauce (or fish sauce)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2/3 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
  • 2/3 Tbsp Sugar (adjust sweetness to taste)
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Toasted Sesame Seeds (for garnish)
  • 1/5 Tbsp Black Pepper
  • 1 Tbsp Sesame Oil (for finishing)

Cooking Instructions

Rinse the fresh squid thoroughly, pat it dry, and then cut it into large, bite-sized pieces. Using both the body and tentacles will make the dish more substantial.

In a bowl, combine all the seasoning ingredients except for the sesame seeds, black pepper, and sesame oil: 1 Tbsp cooking oil, 1 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp gochujang, 2/3 Tbsp gochugaru, 2/3 Tbsp sugar, and 1 Tbsp mirin. Mix well to create a delicious sauce. (You can adjust the seasoning by adding more soy sauce or sugar to suit your taste).

Chop the prepared vegetables (king oyster mushrooms, carrot, onion) into large pieces, similar in size to the squid. Trim the ends of the Korean green peppers and cut them in half. Having all your ingredients prepped beforehand will make the cooking process much smoother.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the minced garlic and thickly sliced onion, and sauté until fragrant. Cook until the garlic’s aroma infuses the oil.

Once the onions become translucent and start to soften, add the sliced king oyster mushrooms and stir-fry them together. Cook until the mushrooms are tender and release their savory aroma.

Now, add the prepared squid to the pan and stir-fry over high heat. Avoid overcooking the squid, as it can become tough. Cook just until the squid turns opaque on the outside.

Pour in the prepared seasoning sauce and stir-fry quickly over high heat, ensuring the squid and vegetables are well combined. The key is to stir-fry rapidly so the sauce coats everything evenly.
