Main Ingredients
- 2 large squids, cleaned (approx. 480g)
- 2/3 stalk green onion
- 1/2 medium onion
- 1/4 carrot
- 3 shiitake mushrooms
- 1/2 pack enoki mushrooms
- 1/2 pack king oyster mushrooms
- 1 green chili pepper, 1 red chili pepper
- 5 perilla leaves
- 1/2 Tbsp sesame oil
- A pinch of sesame seeds
- 120ml water
Spicy and Sweet Sauce
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 1.5 Tbsp jocheong (rice syrup) or corn syrup
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- A pinch of black pepper
For Serving
- Cooked somen noodles
- Fresh lettuce wraps
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 1.5 Tbsp jocheong (rice syrup) or corn syrup
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- A pinch of black pepper
For Serving
- Cooked somen noodles
- Fresh lettuce wraps
Cooking Instructions
Step 1
First, peel the skin off the squid. If the skin is slippery and hard to peel, gently rub it with a paper towel to get a better grip, then pull it off from one end.
Step 2
Cut the squid into bite-sized pieces. Slice the body into approximately 0.8 to 1 cm thick rings, and separate the tentacles into individual pieces.
Step 3
Prepare the vegetables. Thinly slice the onion into julienne. Slice the green onions and chili peppers diagonally. Trim the stems from the mushrooms and slice or tear them into bite-sized pieces. Slice the carrot into similar sizes. Finally, thinly slice the perilla leaves into long strips for added fragrance.
Step 4
To make the sauce, combine all the sauce ingredients (gochugaru, gochujang, soy sauce, jocheong, sugar, minced garlic, and black pepper) in a bowl. Mix them thoroughly. Letting the sauce sit for about 5 minutes will allow the flavors to meld together beautifully.
Step 5
Divide the sauce into two portions. Marinate the squid with one half, gently massaging it in. In a separate bowl, toss the prepared vegetables (except the perilla leaves) with the remaining half of the sauce. Marinating separately helps to bring out the best flavors of both the squid and the vegetables.
Step 6
Heat a frying pan over medium-high heat. Add the marinated squid and vegetables to the pan. Stir-fry until the squid is cooked through and tender, which should take approximately 4 minutes and 30 seconds. Be careful not to overcook, as the squid can become tough.
Step 7
Once the squid is cooked, turn off the heat. Add the thinly sliced perilla leaves, sesame oil, and sesame seeds. Toss everything gently to combine. The fresh aroma of perilla leaves and the nutty flavor of sesame will enhance the overall taste of the dish.
Step 8
Serve the delicious stir-fried squid immediately. It’s wonderful enjoyed with freshly boiled somen noodles and fresh lettuce wraps for a complete and satisfying meal. This dish is perfect as a main side dish or even as an appetizer!
