- 1 Tbsp Fish Sauce (Anchovy)
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- 1 Tbsp Plum Extract (Maesilcheong)
- 5 Tbsp Soy Sauce
- 3 Tbsp Sugar
- 5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Minced Garlic
- 1 Tbsp Fish Sauce (Anchovy)
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- 1 Tbsp Plum Extract (Maesilcheong)
Cooking Instructions
Step 1
Prepare 500g of fresh pork belly. Thicker cuts will provide a more satisfying texture.
Step 2
Clean the two squid thoroughly, removing the innards and rinsing under cold water. Cut them into bite-sized pieces. (If you find this step bothersome, you can use pre-cleaned squid from the market.)
Step 3
Cut the pork belly into bite-sized pieces, similar in size to the squid, and place them in a large bowl. The fat from the pork belly will add wonderful flavor to the dish.
Step 4
Slice the onion thinly, cut the Korean zucchini into half-moon shapes, and chop the mushrooms and cabbage into appropriate sizes. Utilizing any leftover vegetables you have in your fridge will make your O-Sam Bulgogi even more abundant and colorful. Add all these prepared vegetables to the bowl with the pork belly.
Step 5
Now, let’s make the delicious seasoning sauce. Combine 5 tablespoons of soy sauce, 3 tablespoons of sugar, 5 tablespoons of gochugaru (Korean chili flakes), 2 tablespoons of minced garlic, 1 tablespoon of fish sauce, 1 tablespoon of sesame oil, and 1 tablespoon of plum extract. Finally, add a pinch of black pepper to balance the flavors.
Step 6
Put on a pair of disposable gloves and gently mix all the ingredients in the bowl with the sauce. Ensure everything is evenly coated. For even better flavor, let it marinate for about 10 minutes.
Step 7
Heat a pan over medium-high heat. Add all the marinated O-Sam Bulgogi ingredients. Stir-fry until the pork belly starts to turn golden brown.
Step 8
Once the pork belly and squid are partially cooked, add the blanched bean sprouts on top. Continue to stir-fry until the bean sprouts are slightly tender but still crisp.
Step 9
Taste the dish and adjust the seasoning if needed. If it’s too bland, add 2 more tablespoons of soy sauce and 1 tablespoon of gochugaru. Finish by adding some thinly sliced green onions and stir-frying briefly for added fragrance.
Step 10
Once everything is well-cooked and the sauce has melded beautifully, your delicious O-Sam Bulgogi is ready! For an ultimate treat, mix in some cooked rice with the remaining sauce in the pan to make a fantastic fried rice.
