I made stir-fried squid for brunch today. The weather’s hot and I didn’t have much of an appetite, so the kids had theirs mixed with a fried egg. ^^

Seasoning Ingredients
- Gochugaru (Korean chili powder) 4 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Soy sauce 2 Tbsp
- Oligosaccharide 1 Tbsp
- Sugar 2 Tbsp
- Minced garlic 1 Tbsp
- Cooking wine (Mirin, etc.) 1 Tbsp
- Curry powder 1/2 Tbsp
- Water 3 Tbsp
- Black pepper to taste (a pinch)

Cooking Instructions
Step 1
First, thoroughly wash and prepare all the vegetables for the stir-fried squid. Slice the onion thinly, and cut the green onion diagonally. Chop the cabbage into bite-sized pieces, and remove the seeds from the red and green chili peppers before slicing them diagonally.

Once sliced, place all the prepared vegetables into a single bowl. Having your vegetables prepped like this makes the cooking process much smoother.

Carefully remove the innards from the body of the squid. For the tentacles, sprinkle a little salt and gently rub them to clean off any impurities, ensuring a cleaner result. If you are using frozen squid, make sure to take it out and let it thaw naturally before cooking.

Now, let’s make the essential sauce for our delicious stir-fried squid! In a bowl, combine 4 Tbsp gochugaru (Korean chili powder), 2 Tbsp gochujang (Korean chili paste), 2 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp oligosaccharide, 1 Tbsp minced garlic, 1 Tbsp cooking wine (like Mirin), 1/2 Tbsp curry powder, and 3 Tbsp water. Mix everything thoroughly. Finally, add a pinch of black pepper for an extra burst of flavor.
Step 5
Heat a pan over medium heat and add 1 Tbsp sesame oil and 1 Tbsp cooking oil. Gently sauté the prepared sauce for a short while. Be careful not to burn the sauce; cooking it slowly will help develop a deeper flavor profile.

Once the sauce starts to bubble, add all the prepared vegetables to the pan. Increase the heat to high and stir-fry quickly. To maintain the vegetables’ crispness, stir-frying them over high heat for a short time is key.

When the vegetables are well coated with the sauce, add the prepared squid. Continue to stir-fry rapidly over high heat. Squid can become tough if overcooked, so turn off the heat as soon as its color changes.
