Here’s a recipe for stir-fried squid that you can enjoy as a delightful side dish anytime, not just on special occasions.

Main Ingredients

  • 1 fresh squid (body approx. 200-250g)
  • 1 paprika each (red, yellow)
  • 1 handful of oyster mushrooms (approx. 50g)
  • 1/2 onion
  • 1 stalk of green onion
  • A pinch of sesame seeds (for garnish)
  • 3 tablespoons cooking oil

Squid Stir-fry Sauce

  • 1 tablespoon minced garlic
  • 1 tablespoon sugar (sweetness can be adjusted)
  • 1 tablespoon fine gochugaru (Korean chili powder, adjust spiciness)
  • 1 tablespoon soy sauce
  • 1 tablespoon tuna extract or fish sauce (for umami!)
  • 3 tablespoons gochujang (Korean chili paste, for mild spiciness)
  • 1 tablespoon sesame oil
  • 3 shakes of black pepper (a pinch)
  • 1 tablespoon sesame seeds

Cooking Instructions

Step 1

Prepare all the vegetables and the squid. Remove the seeds from the paprikas and cut them into long strips about 1cm thick. Slice the onion into similar-sized strips. Cut the green onion diagonally. Tear the oyster mushrooms into bite-sized pieces. Clean the squid, remove the ink sac and cartilage, and score the body in a crosshatch pattern; this helps the sauce penetrate better and improves the texture. Cut the scored squid into pieces about 1.5-2cm wide.

In a bowl, combine all the ingredients for the squid stir-fry sauce and mix them thoroughly with a spoon to create a delicious sauce. Add minced garlic, sugar, gochugaru, soy sauce, tuna extract, gochujang, sesame oil, black pepper, and sesame seeds in order and mix well. You can adjust the amount of sugar and gochugaru to your preference.

Heat a wide pan over medium heat, add 3 tablespoons of cooking oil, and stir-fry the sliced green onions and onions until fragrant. The sweetness of the green onions and the aroma of the onions will enhance the flavor of the stir-fried squid.

Once the green onions and onions become slightly translucent, add the torn oyster mushrooms and stir-fry them together. Cook for about 1-2 minutes until the mushrooms soften.

Now, add the main ingredients, squid and colorful paprikas, to the pan. After adding the squid and paprikas, stir-fry quickly over high heat to prevent them from becoming tough from overcooking.

Pour all the prepared squid stir-fry sauce into the pan and mix well with the ingredients.

Stir-fry rapidly over high heat for 2-3 minutes, stirring continuously to prevent the sauce from burning. The dish is ready when the squid turns opaque and the sauce evenly coats the vegetables and squid. Adjust the cooking time based on your stove’s heat.

Transfer the delicious stir-fried squid to a serving plate and sprinkle with sesame seeds for a nutty finish. Your spicy and sweet stir-fried squid is ready to be enjoyed with warm rice as a hearty meal or a special side dish!
