  • 200g Thick Bean Sprouts
  • 300g Pork (for bulgogi)
  • 1 Onion
  • 1 King Oyster Mushroom
  • 1 Korean Green Chili Pepper (optional, for extra spice)
  • 1/2 Green Onion
  • 3 cloves Garlic (or 3 small garlic cloves)

Cooking Instructions

Step 1

1. **Make the Delicious Sauce:** In a large bowl, combine 2 Tbsp fine chili powder, 1 Tbsp chili paste, 2.5 Tbsp soy sauce, 0.5 Tbsp dark soy sauce, 1 Tbsp cooking wine, 1 Tbsp ginger wine, 1 Tbsp plum extract, and 0.75 Tbsp sugar. Whisk until smooth and well combined. Making the sauce ahead of time allows the flavors to meld beautifully.

2. **Marinate the Pork:** Add half of the prepared sauce (about half the amount) to the 300g of pork. Gently mix with your hands until well coated. Let it marinate for 10 minutes; this helps the pork absorb the flavors and become more tender.

3. **Prepare the Vegetables:** Wash the bean sprouts thoroughly and drain them. Slice the onion, and chop the king oyster mushrooms into bite-sized pieces. Slice the Korean green chili pepper if you want extra spice, and diagonally slice the green onion. Mince or thinly slice the garlic.

4. **Stir-fry the Vegetables:** Heat a little cooking oil in a pan over medium heat. Add the sliced garlic, onion, and king oyster mushrooms. Stir-fry until the onions become translucent. The aroma of garlic will enhance the flavor.

5. **Stir-fry the Pork:** Once the vegetables are about half-cooked, add the marinated pork to the pan. Break up the meat with your spatula and stir-fry over medium heat until the pork is partially cooked, just browned on the outside.

6. **Add Remaining Sauce and Bean Sprouts:** When the pork is about halfway cooked, add the remaining sauce to the pan and mix well. Then, add the washed bean sprouts and stir-fry until everything is evenly coated with the sauce.

7. **Add Finishing Vegetables:** Once the bean sprouts and sauce are somewhat combined, add the sliced green onions and green chili pepper (if using). Stir-fry quickly for about 1 minute more. The fresh taste of green onions and the kick from the chili pepper will add extra deliciousness.

8. **Cook the Bean Sprouts:** After adding the bean sprouts, stir-fry over high heat for about 4 minutes, stirring quickly to keep the bean sprouts crisp. Be careful not to overcook them, as they can become soggy.

9. **Enhance the Flavor:** Just before turning off the heat, drizzle with sesame oil and sprinkle with toasted sesame seeds. This step adds a wonderful nutty aroma to your dish.
