  • 1-2 Scallions (Green Onions)

Pork Marination

  • 2 Tbsp Mirin (or Cooking Sake)
  • Pinch of Black Pepper

Spicy & Sweet Jeyuk Sauce

  • 3 Tbsp Soy Sauce
  • 1 Tbsp Gochujang (Korean Chili Paste – heaped)
  • 1 Tbsp Oligodang (or Corn Syrup/Rice Syrup)
  • 2 Tbsp Maesil Cheong (Plum Extract) (or Sugar)
  • 2 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Oyster Sauce
  • Pinch of Black Pepper

Cooking Instructions

First, let’s prepare the vegetables. Wash the scallions and cut them into large, 4-5cm pieces. Peel the onion and slice it into thin strips, about 0.5cm thick. This slicing method provides a nice texture when stir-fried.

Gently pat the pork shoulder slices dry with paper towels to remove excess moisture. Then, add 2 tablespoons of mirin and a pinch of black pepper. Mix well by hand, gently massaging the seasoning into the meat. This marination process helps eliminate any gamey smell and makes the pork more tender. Let it marinate for about 5 minutes.

Stir everything together until well combined and smooth, ensuring there are no lumps.

Stir-frying over high heat is key to locking in the juices and ensuring the meat cooks deliciously. As the pork starts to brown on the surface, use a spatula to break up the pieces and stir-fry until about 90% cooked. Be careful not to overcook, as it can become tough.

Once the pork is almost cooked, add all the sliced onions to the pan and stir-fry together. The onions will release moisture, blending with the pork and deepening the flavor. Continue to stir-fry for about 2-3 minutes until the onions become translucent. Maintain medium-high heat during this step.
