Main Ingredients
- Pork Shoulder Loin 600g (1lb)
- 1/2 Onion
- 1/4 Carrot
- 2 Korean Chili Peppers (Cheongyang peppers)
- 1 pack (100g) Enoki Mushrooms
- 1 Scallion
Seasoning Ingredients
- 2 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (Anchovy or Tuna sauce)
- 1 Tbsp Sugar
- 2 Tbsp Rice Wine (Mirin)
- 3 Tbsp Corn Syrup or Oligosaccharide
- 3 Tbsp Gochugaru (Korean Chili Flakes – adjust to spice preference)
- 2 Tbsp Gochujang (Korean Chili Paste)
- 1 tsp Dasida (or Chicken Stock)
- 2 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Sesame Oil
- 1 tsp Sesame Seeds
- 2 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (Anchovy or Tuna sauce)
- 1 Tbsp Sugar
- 2 Tbsp Rice Wine (Mirin)
- 3 Tbsp Corn Syrup or Oligosaccharide
- 3 Tbsp Gochugaru (Korean Chili Flakes – adjust to spice preference)
- 2 Tbsp Gochujang (Korean Chili Paste)
- 1 tsp Dasida (or Chicken Stock)
- 2 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Sesame Oil
- 1 tsp Sesame Seeds
Cooking Instructions
Step 1
First, lightly pat the pork shoulder loin dry with paper towels to remove excess moisture. Place the pork in a mixing bowl. Add 1 tablespoon of sugar and 2 tablespoons of rice wine. Gently knead and mix the pork to tenderize it and remove any gamey smell.
Step 2
Next, prepare the vegetables for the stir-fry. Thinly slice the onion. Slice the carrot thinly, either into rounds or matchsticks. Slice the Korean chili peppers diagonally. Trim the root end of the enoki mushrooms and separate them into strands. Slice the scallion diagonally. Having all your vegetables prepped beforehand will make the cooking process much smoother.
Step 3
Add the marinated pork and all the prepared vegetables (except enoki mushrooms) to the bowl. Now, add the seasoning ingredients: 2 Tbsp soy sauce, 2 Tbsp fish sauce, 1 Tbsp sugar, 2 Tbsp rice wine, 3 Tbsp corn syrup or oligosaccharide, 3 Tbsp gochugaru, 2 Tbsp gochujang, 1 tsp Dasida, and 2 Tbsp perilla oil. Mix everything thoroughly with your hands until the pork and vegetables are evenly coated. Let it marinate for at least 10 minutes to allow the flavors to meld.
Step 4
Heat a wok or a large skillet over high heat until it’s very hot. Add all the marinated pork and begin to stir-fry. Initially, cook over high heat to quickly sear the outside of the pork.
Step 5
Reduce the heat to medium to prevent burning. Use chopsticks or a spatula to break apart the pork if it clumps together, ensuring it cooks evenly. Stir-fry until the pork is about 80% cooked through.
Step 6
Once the pork is mostly cooked, add the sliced onion, carrot, and Korean chili peppers. Stir-fry together with the pork. Be careful not to overcook the vegetables; you want them to retain a slight crunch.
Step 7
Finally, add the prepared enoki mushrooms and scallions to the wok. Stir gently to combine. Enoki mushrooms cook very quickly, so stir-fry them over high heat for just a short time to keep them from becoming watery and to maintain their texture.
Step 8
When all the ingredients are well combined and the sauce has slightly reduced, turn off the heat. Drizzle with 1 tablespoon of sesame oil and sprinkle with 1 teaspoon of sesame seeds, then give it one final mix. Your delicious Jeyuk Bokkeum, with a beautiful sheen, is ready!
