Spicy and Sweet Stir-Fried Pork (Jeyuk Bokkeum) Recipe

This is a dish that appeals to everyone, regardless of age or gender! With this Jeyuk Bokkeum, you can create a satisfying meal with just one dish, no other side dishes needed! Enjoy the rich flavor of pork perfectly complemented by a sweet and spicy sauce.
Main Ingredients- 500g thinly sliced pork belly (daepae samgyeopsal)
- 1/2 green onion (scallion)
- 1/2 onion
Seasoning Ingredients- 3 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 4 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or similar)
- 1 Tbsp sugar
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 3 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 4 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or similar)
- 1 Tbsp sugar
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare your vegetables. Peel the onion and slice it into thin strips (julienne). Wash the green onion and slice it diagonally into 5cm lengths. Slicing the vegetables this way helps them cook evenly with the pork without burning.
Step 2
Let’s make the delicious sauce that will define the flavor of your Jeyuk Bokkeum. In a bowl, combine 3 Tbsp gochugaru, 1 Tbsp gochujang, 4 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp sugar, 2 Tbsp corn syrup, 1 Tbsp minced garlic, and 1 Tbsp sesame oil. Stir everything together with a spoon until well combined. It’s important to break up any clumps in the seasoning mixture.
Step 3
Now it’s time to stir-fry. Heat a pan over medium heat and add the 500g of thinly sliced pork belly. Cook until it’s golden brown and slightly crispy. Because the pork belly is sliced so thinly, it cooks quickly, so be careful not to burn it. You’ll see delicious fat rendering from the pork.
Step 4
Once the pork belly has rendered enough fat, add the prepared vegetables: the julienned onion and diagonally sliced green onion. Stir-fry them together with the pork for about 1-2 minutes, just until the vegetables become slightly translucent. Avoid overcooking the vegetables, as this can make them lose their pleasant crispiness.
Step 5
Finally, pour the prepared sauce into the pan and quickly stir-fry everything together until the sauce coats all the ingredients evenly. Cook until the sauce thickens slightly and coats the pork and vegetables beautifully. Your delicious Jeyuk Bokkeum is ready! Serve it over a bowl of hot rice for an incredibly satisfying meal.
