Enjoy a fantastic meal at home! This Jeyuk Bokkeum recipe uses pork hind leg and features a classic spicy and sweet flavor profile. While I often make a soy sauce-based version for the kids, this time we’re adding gochujang (Korean chili paste) and gochugaru (Korean chili flakes) for that irresistible kick that Koreans love.   • Pork hind leg 850g (cut into bite-sized pieces)
  • Bok choy 1 handful
  • Onion 1 medium (sliced)
  • Green onion 1/2 stalk (sliced diagonally)

First, prepare the 850g of pork hind leg. If there’s any blood remaining, gently press it out with paper towels to ensure a clean flavor without any gamey smell. Cut the pork into bite-sized pieces.

Now, let’s make the delicious marinade. In a bowl, combine 2 Tbsp gochujang, 2 Tbsp gochugaru, 8 Tbsp soy sauce, 4 Tbsp plum extract, 2 Tbsp sugar, 2 Tbsp cooking wine, 1/4 tsp ginger powder, 1 Tbsp minced garlic, and a pinch of black pepper.

Add the prepared pork to the marinade and mix well, like gently massaging it. Ensure the marinade coats every piece of pork evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to marinate. If you have more time, marinating for an hour will develop an even deeper flavor.

Heat a non-stick frying pan over medium-high heat. Add all the marinated pork to the hot pan without adding any oil. Stir-frying over high heat quickly helps to seal in the juices, keeping the pork moist.
