Main Ingredients

  • Pork Shoulder 600g (cut into bite-sized pieces)
  • Sugar 2 Tbsp
  • Soy Sauce 2 Tbsp
  • Green Onion 1 (sliced diagonally)
  • Onion 1 (sliced thinly)
  • Green Chili Pepper 1 (sliced diagonally, adjust to spice preference)

Sauce

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 2 Tbsp
  • Mirin (or cooking wine) 3 Tbsp
  • Corn Syrup 2 Tbsp (for gloss and sweetness)
  • Oyster Sauce 1 Tbsp
  • Minced Garlic 1 Tbsp

Cooking Instructions

Step 1

First, prepare 600g of pork shoulder. Place the pork in a bowl, add 2 Tbsp of sugar and 2 Tbsp of soy sauce, and mix well by massaging the meat. Let it marinate for about 30 minutes; this helps the pork become tender and absorb the flavors beautifully.

Step 2

Now, let’s make the delicious sauce for the Jeyuk Bokkeum. In a separate bowl, combine 2 Tbsp of Gochujang, 2 Tbsp of Gochugaru, 3 Tbsp of Mirin, 2 Tbsp of Corn Syrup, 1 Tbsp of Oyster Sauce, and 1 Tbsp of minced garlic. Stir everything together with a spoon until well combined. Using corn syrup adds a lovely sheen to the dish.

Step 3

Heat a pan over medium heat and add the marinated pork. Stir-fry until the pork is partially cooked. Once the pork starts to cook, add all the prepared sauce and stir-fry to ensure the sauce evenly coats the meat. At this point, add 1 thinly sliced onion and 1 diagonally sliced green onion to the pan and stir-fry them together. When the onion becomes translucent, add 1 diagonally sliced green chili pepper and mix everything one last time to enhance the spicy aroma.

Step 4

Finally, for an extra touch of flavor and texture, sprinkle some sesame seeds over the dish as desired. Give it a final mix, then turn off the heat. Your delicious Jeyuk Bokkeum is ready! Serve it hot over a bowl of steamed rice for a delightful meal.
