Spicy and Sweet Stir-fried Pork (Jeyuk Bokkeum)

A simple and satisfying meal: Jeyuk Bokkeum! This recipe works perfectly with pork neck, shoulder, or leg. It’s a fantastic dish that’s perfect for a quick lunch or dinner, with its delightful spicy and sweet flavor that pairs wonderfully with rice.

Main Ingredients

  • Pork neck, shoulder, or leg 500~600g

Sauce

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 4 Tbsp
  • Soy sauce 5 Tbsp
  • Sugar 3 Tbsp (use 4 Tbsp if using corn syrup/oligo syrup)
  • Oyster sauce 1 Tbsp
  • Mirin (rice wine) 1 Tbsp
  • Minced garlic 1 Tbsp

Vegetables

  • 1 large onion
  • 1/5 carrot
  • 1 stalk green onion
  • 3 cloves garlic

Cooking Instructions

First, thinly slice the whole garlic cloves. (Optional: For an extra kick, you can add thinly sliced red chili peppers or spicy Cheongyang peppers if you have them.)

In a bowl, combine all the sauce ingredients: gochujang, gochugaru, soy sauce, sugar, oyster sauce, mirin, and minced garlic. Mix them thoroughly until the sugar dissolves to create a delicious sauce. (Tip: If you’re using corn syrup or oligo syrup instead of sugar, use 4 tablespoons for a similar level of sweetness.)

In a large bowl, add the pork, sliced onion, carrot, green onion, and sliced garlic. Pour the prepared sauce over everything. Use your hands to gently mix and massage the ingredients, ensuring the sauce coats the pork and vegetables evenly.

Let the marinated pork and vegetables rest for about 20 minutes, either in the refrigerator or at room temperature. This marinating time allows the flavors to meld and deepen beautifully.

Heat a frying pan over high heat. Add the marinated pork and vegetables to the hot pan and stir-fry briskly. (Tip: Cooking over high heat helps to prevent the vegetables from releasing too much water, maintaining the delicious texture of the Jeyuk Bokkeum!)
