Spicy and Sweet Stir-fried Pork (Dwaeji Bulgogi)

This Dwaeji Bulgogi is so addictive when eaten with fresh lettuce wraps! It’s a quick and easy recipe you can whip up in just 30 minutes.

Main Ingredients

  • 1kg Pork (for Bulgogi) (A mix of tenderloin and shoulder is recommended for best texture and flavor)
  • 2 Onions (thickly sliced)
  • 2 Tbsp Minced Garlic (or sliced garlic)
  • 1 handful of Chili Peppers (adjust quantity to your preference)

Seasoning Ingredients

  • 8 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 8 Tbsp Mirin (or Rice Wine)
  • 2.5 Tbsp Brown Sugar (adjust sweetness to your taste)
  • 3 Tbsp Corn Syrup (or Oligosaccharide)
  • 2 Tbsp Soy Sauce
  • 3 Tbsp Minced Garlic
  • 0.5 tsp Grated Ginger (or ginger paste)
  • 0.5 tsp Black Pepper
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Sesame Seeds (toasted)

Cooking Instructions

Step 1

First, let’s make the delicious sauce for 1kg of pork. In a bowl, combine 8 Tbsp Gochujang, 4 Tbsp Gochugaru, 8 Tbsp Mirin, 2.5 Tbsp Brown Sugar, 3 Tbsp Corn Syrup, 2 Tbsp Soy Sauce, 3 Tbsp Minced Garlic, 0.5 tsp Grated Ginger, 0.5 tsp Black Pepper, 1 Tbsp Sesame Oil, and 2 Tbsp Sesame Seeds. Mix well until there are no lumps.

Prepare 1kg of pork for bulgogi (using a mix of tenderloin and shoulder can add tenderness and flavor). Pour the prepared sauce generously over the pork and mix thoroughly with your hands, massaging the sauce into the meat. Let it marinate for about 10 minutes to allow the flavors to meld. This step ensures the sauce penetrates the meat for a deeper taste.

Heat a pan over medium heat and add 3 Tbsp cooking oil. Add 2 Tbsp sliced garlic (or minced garlic) and 2 thinly sliced onions. Stir-fry until fragrant. When the onions begin to turn translucent, the garlic will release a lovely aroma, making the dish even more delicious.

Add the marinated pork to the pan and stir-fry over medium heat for about 10 to 15 minutes. Use chopsticks to break up the meat as it cooks, ensuring it cooks evenly. The key is to stir-fry until the pork is lightly browned and the sauce has thickened slightly.

Finally, add a handful of chili peppers and mix them in gently. If you like it spicier, you can increase the amount of chili peppers or use spicy Korean peppers (like Cheongyang). Turn off the heat once everything is well combined.

And there you have it – a mouthwatering spicy and sweet Dwaeji Bulgogi! Serve it with fresh lettuce wraps (like red leaf lettuce, perilla leaves, or crown daisies) and a side of ssamjang (Korean dipping sauce) for a delightful meal. Wrap a piece of pork in lettuce with some ssamjang and enjoy!
