Main Ingredients
  • 200g Korean green peppers (Gwori Gochu)
  • 1 handful of prepared anchovies (about 50g)
  • 4 whole cloves garlic

Seasoning Ingredients
  • 3 Tbsp water
  • 4 Tbsp soy sauce
  • 3 Tbsp oligosaccharide
  • 1 Tbsp minced garlic
  • Sesame seeds, a pinch
  • Canola oil or cooking oil, a little

Cooking Instructions

Step 1

First, remove the stems from the Korean green peppers and wash them thoroughly under running water. After draining, prick each pepper 2-3 times with a fork or toothpick. This helps the seasoning penetrate better. For the anchovies, using small dried anchovies will result in a crispier and tastier dish. You can slice the whole garlic cloves or leave them whole, as preferred.

Step 2

In a deep pan (a wok or a deep skillet is recommended), combine 3 Tbsp of water, 4 Tbsp of soy sauce, and 3 Tbsp of oligosaccharide. Mix well to create the seasoning base. You can adjust the sweetness and saltiness to your taste.

Step 3

Add the prepared Korean green peppers and sliced garlic cloves (or whole garlic) to the seasoning base.

Step 4

Turn the heat to medium and bring the mixture to a boil. Once it starts boiling, let it simmer to allow the seasoning to fully infuse the peppers and garlic. Cook until the peppers are slightly softened.

Step 5

When the sauce begins to reduce and thicken, add the prepared anchovies. Gently mix to ensure the anchovies don’t break apart.

Step 6

As the anchovies start to cook, add 1 Tbsp of minced garlic and sprinkle with sesame seeds. Drizzling a little canola oil or cooking oil will make the anchovies more savory and glossy. Stir-fry quickly over medium-high heat, being careful not to burn the anchovies.

Step 7

Once all the ingredients are well combined with the seasoning and the anchovies are crisply stir-fried, turn off the heat and serve attractively in a dish. Your delicious stir-fried peppers with anchovies are ready! Enjoy with a warm bowl of rice.
