Main Ingredients

  • 10 Korean green peppers (Ggwari Gochu)
  • 1 Tbsp all-purpose flour

Seasoning Ingredients

  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1.5 Tbsp soy sauce
  • 0.5 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 0.5 Tbsp sugar
  • A pinch of toasted sesame seeds (to taste)

Cooking Instructions

Step 1

First, wash the Korean green peppers thoroughly under running water. Then, to preserve their fresh flavor, neatly trim off the stems. To help the peppers absorb the seasoning well, prick each pepper 2-3 times with a fork or skewer. This step ensures the flavors penetrate deeply, making the dish even more delicious.

Step 1

Step 2

It’s important to coat the peppers evenly with flour while they are still slightly damp. Place the Korean green peppers into a large plastic bag or zip-top bag, and add 1 tablespoon of all-purpose flour. (Tip: Adding too much flour can make the texture heavy, so it’s recommended to adjust the amount based on the quantity of peppers or start with half the amount.)

Step 2

Step 3

Close the opening of the plastic bag and gently blow air into it to inflate it like a balloon. Then, shake the bag vigorously. This will ensure the flour coats the peppers evenly without clumping. Shake thoroughly.

Step 3

Step 4

Now, let’s add a little moisture to the flour-coated peppers. Lightly sprinkle about 2 tablespoons of water over the peppers, as if misting them. Next, loosely tie the opening of a microwave-safe plastic bag (or a regular plastic bag) and microwave for 2 minutes. (Caution: The bag may puff up, so avoid tying it too tightly; tying it loosely or folding it in half before microwaving is safer.)

Step 4

Step 5

The peppers, now cooked in the microwave, should be tender. Transfer these peppers to a bowl. To help the seasoning adhere better, let them cool slightly until they are no longer piping hot, then sprinkle just a tablespoon or two of water over them. This slight moisture will make the seasoning mix in much more easily.

Step 5

Step 6

Let’s prepare some scallions to add extra flavor to this side dish. Clean and trim about 3 scallions, wash them under running water, and then finely chop them into about 0.5 cm pieces. The refreshing aroma of the scallions will elevate the taste of the Korean green pepper stir-fry.

Step 6

Step 7

Now, add all the seasoning ingredients to the bowl with the peppers. Add gochugaru, soy sauce, minced garlic, sugar, sesame oil, and the chopped scallions you prepared. Sprinkle with toasted sesame seeds to your liking. Mix everything together gently to ensure the seasonings are evenly distributed without clumping.

Step 7

Step 8

Gently mix the Korean green peppers with the prepared seasonings using your hands or a spoon until everything is well combined. This simple stir-frying motion will complete your delicious Korean green pepper side dish. Avoid mixing too vigorously; a gentle toss will allow the ingredients to meld together beautifully.

Step 8

Step 9

Your crunchy yet spicy and sweet Korean green pepper stir-fry is ready! It makes a wonderful side dish to enjoy with a warm bowl of rice. For more cooking recipes and information, please visit https://seunmi1981.tistory.com/
