First, prepare all the ingredients you’ll need for this dish. Gently clean the king oyster mushrooms and pat them dry. For the seasoning, combine all the ingredients in a small bowl and mix well to create a delicious sauce beforehand. This will make the cooking process much smoother.

Carefully wipe off any dirt or debris from the king oyster mushrooms using a soft brush or a paper towel. Then, slice them into bite-sized pieces, about 0.5cm thick. Slicing them too thinly might reduce the chewy texture, while slicing them too thick might prevent the sauce from penetrating well, so aim for a moderate thickness.

In a small bowl, combine 1 Tbsp of gochujang, 1/2 Tbsp of gochugaru, 1 Tbsp of soy sauce, 1 Tbsp of cooking wine, 1/2 Tbsp of minced garlic, 1/2 Tbsp of sesame oil, and 6 Tbsp of water. Stir everything together with a spoon until you have a well-mixed, flavorful seasoning sauce. Adding water helps prevent the sauce from burning during the cooking process and ensures a tender result.

Heat a pan over low heat, then add the prepared king oyster mushrooms without any cooking oil. Slowly grill them over medium-low heat, being careful not to burn them, until their moisture has evaporated and the surface is slightly golden brown. Once the mushrooms are nicely browned, evenly coat them with the prepared seasoning sauce. Flip them to ensure both sides are well-covered, then return the pan to low heat and let the sauce simmer and penetrate the mushrooms slowly. While the mushrooms release their own moisture during cooking, it’s crucial to manage the heat carefully to prevent the sauce from becoming too dry and burning. Continue to cook until the sauce has thickened and coats the mushrooms nicely.
