Spicy and Sweet Stir-Fried King Oyster Mushrooms with Vegetables
King Oyster Mushroom and Vegetable Stir-Fry: A Delicious Way to Use Up Leftover Veggies
This is a flavorful side dish made by stir-frying leftover vegetables with king oyster mushrooms. It’s seasoned with a spicy and sweet sauce that perfectly complements rice, making it incredibly addictive!
Main Ingredients- 3 King Oyster Mushrooms (large)
- 1/4 Red Bell Pepper
- 1/4 Yellow Bell Pepper
- 1/4 Orange Bell Pepper
- 1/2 Carrot (medium)
- 5 Scallions
Cooking Instructions
Step 1
First, wash all the vegetables (king oyster mushrooms, bell peppers, carrot, scallions) you’ll be using for the dish. Slice the king oyster mushrooms about 0.5cm thick, then cut them into long strips about 3-4cm in length. Julienne the bell peppers and carrot into similar lengths and thicknesses. Separate the white and green parts of the scallions and cut them into 3-4cm lengths.
Step 2
Heat a pan over medium-low heat and add 3 tablespoons of chili oil. Add the white parts of the chopped scallions and 1 tablespoon of minced garlic. Stir-fry until fragrant, being careful not to burn them. Cook for about 1 minute, or until a lovely aroma is released.
Step 3
Once the garlic and scallions are fragrant, add the prepared king oyster mushrooms and carrot to the pan. Stir-fry over medium heat for about 2-3 minutes, until the mushrooms start releasing their liquid and the carrots are slightly tender.
Step 4
When the mushrooms and carrots are partially cooked, add the colorful bell peppers and the green parts of the scallions. Stir-fry together, being careful not to overcook them to maintain their crispness. Add 1.5 tablespoons of oyster sauce for umami flavor and stir-fry for another minute until all ingredients are well coated.
Step 5
Once all the ingredients are cooked to your liking, turn off the heat. Stir in 1 tablespoon of sesame oil and 0.5 tablespoon of toasted sesame seeds to finish. Adding sesame oil and seeds at the end enhances their aromatic flavor. Serve immediately while warm, or let it cool and store it in an airtight container for a delicious side dish that lasts.
