Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly and pat them dry. Then, slice them lengthwise into approximately 1 cm thick pieces, keeping the stem intact. Avoid slicing them too thinly, as they might break apart during cooking.
Step 2
Lightly grease a frying pan with cooking oil and heat it over medium-low heat. Place the sliced mushrooms in the pan and cook one side until it turns a nice golden brown. This slow cooking helps bring out their chewy texture.
Step 3
Once the bottom side of the mushrooms is beautifully browned, flip them over and cook the other side until it’s also golden brown. This step is crucial for achieving the desired chewy texture.
Step 4
While the mushrooms are cooking, prepare the sauce in a small bowl. Combine 5 Tbsp water, 1 Tbsp gochujang, 1/3 Tbsp gochugaru, 1/2 Tbsp sesame oil, 1/2 Tbsp soy sauce, 1/2 Tbsp sugar, and 1/3 Tbsp minced garlic. Whisk everything together until smooth and well combined.
Step 5
Pour the prepared sauce evenly over the golden-brown mushrooms in the pan. Pouring it around the edges of the pan can help it spread more effectively.
Step 6
Increase the heat to medium and stir-fry the mushrooms, coating them thoroughly with the sauce using a spatula or chopsticks. Continue to stir and cook until the sauce thickens and coats the mushrooms with a glossy finish.
Step 7
Finally, sprinkle a pinch of sesame seeds over the top for a nutty aroma. If you have green onions, finely chop them and sprinkle them over the dish for an appealing garnish. Your delicious ‘Spicy and Sweet Stir-fried King Oyster Mushrooms’ are now ready to be served! Enjoy them over hot rice.
