Spicy and Sweet Stir-Fried Kimchi Recipe

This is the perfect recipe for when you have too much leftover water kimchi at home or want to use up slightly sour kimchi. The crunchy and flavorful stir-fried sour kimchi, free from the musty smell of aged kimchi, is an absolute rice thief! Revitalize your slightly sour water kimchi solids into a fresh and delicious side dish. The level of sourness in your kimchi will determine how many times you rinse it, making it easy for anyone to follow. We’ve added a richer, healthier flavor using homemade sesame seeds, perilla oil, and shiitake mushroom powder that we personally dried and ground. Create a delicious and healthy side dish with simple ingredients!

Main Ingredients

  • Sour Kimchi (water kimchi solids) 600g
  • 1 Tbsp Minced Garlic
  • 1 Stalk Green Onion (finely chopped)

Seasoning & Other Ingredients

  • 1 Tbsp Shiitake Mushroom Powder
  • 1 Tbsp Toasted Sesame Seeds (ground)
  • 1 Tbsp Soup Soy Sauce (adjust to taste)
  • 1 Tbsp Perilla Oil
  • 1 Tbsp Sugar

Cooking Instructions

Step 1

Drain the water kimchi solids in a sieve, then rinse them lightly under cold water about twice. Be careful not to rinse for too long, as this will wash away the delicious seasoning of the kimchi. Since the sourness of kimchi varies from household to household, it’s best to adjust the rinsing frequency based on taste. If your kimchi isn’t excessively sour or doesn’t have a strong smell like aged kimchi, rinsing it twice should be about right.

After rinsing twice, gently press the kimchi with your hands to remove excess water, but don’t squeeze it completely dry. Set aside the prepared minced garlic, ground sesame seeds, shiitake mushroom powder, and chopped green onions.

Heat a pan with a little perilla oil over medium-low heat. Add the minced garlic and green onions and stir-fry until fragrant. Once the aroma of garlic and green onions is released, add the rinsed kimchi and stir-fry until it becomes slightly translucent.

Once the kimchi is somewhat stir-fried, add the ground sesame seeds and shiitake mushroom powder, mixing them thoroughly. The shiitake mushroom powder adds umami, and the ground sesame seeds contribute a nutty flavor.

Add 1 tablespoon of sugar and 1 tablespoon of soup soy sauce, mixing well to combine. Adjust the amount of soup soy sauce based on the saltiness of your kimchi. After seasoning, reduce the heat to low, cover the pan, and let it simmer for about 5 minutes. This process allows the seasonings to deeply penetrate the kimchi, enriching its flavor. Finally, drizzle 1 tablespoon of perilla oil over the pan and immediately turn off the heat. Perilla oil is sensitive to heat, so adding it after turning off the stove preserves its nutty aroma and taste. Your delicious stir-fried sour kimchi is now ready! Enjoy it with your rice.
