  • 3 sheets of square fish cakes (cut into bite-sized pieces)
  • 2 Cheongyang chili peppers (seeds removed and finely chopped for a spicy kick)
  • 1 white part of a green onion (finely chopped for fragrance)
  • 1/2 green part of a green onion (sliced diagonally for color)

Seasoning

  • 2 Tbsp chili oil (adds spicy aroma and flavor)
  • 1/4 Tbsp minced garlic (adds savory depth)
  • 1/3 Tbsp soy sauce (for basic seasoning)
  • 1/3 Tbsp anchovy sauce (secret ingredient for umami!)
  • 1 Tbsp heaping chili powder (adjust spiciness to your liking)
  • 1/3 Tbsp mirin (or cooking wine, removes gamey smell and adds shine)
  • 1/2 Tbsp sesame oil (adds nutty flavor, drizzle at the end)

Cooking Instructions

Step 1

First, let’s prepare the ingredients for our delicious stir-fried fish cakes. Cut the square fish cakes into bite-sized square pieces. Finely chop the Cheongyang chili peppers after removing the seeds to add a nice spicy kick. Finely chop the white part of the green onion to add fragrance. Slice the green part of the green onion diagonally for a beautiful presentation. Having all your ingredients prepped will make the cooking process smooth and enjoyable.

Step 1

Step 2

Now, let’s start stir-frying! Heat a pan over medium-low heat and add 2 tablespoons of chili oil. Add the chopped white part of the green onion and stir-fry gently. The chili oil will infuse with the aroma of the green onion, creating a wonderfully fragrant base. This step helps to release the natural sweetness of the onion, adding depth to the dish.

Step 2

Step 3

Once the green onion starts to become slightly translucent, add 1/4 tablespoon of minced garlic and stir-fry together. It’s important to maintain low heat to prevent the garlic from burning. Sauté until you can smell the fragrant garlic aroma filling your kitchen. This ensures the garlic’s flavor is well incorporated into the oil, making the fish cakes even more delicious.

Step 3

Step 4

Add the prepared square fish cakes and the finely chopped Cheongyang chili peppers to the pan. Stir-fry them together. The fish cakes will get coated in the oil, developing a delightful chewy texture, while the chili peppers add an appetizing spiciness. Keep stir-frying gently to prevent the fish cakes from sticking together.

Step 4

Step 5

It’s time to add the flavorful seasonings! Add all the seasoning ingredients except for the sesame oil: soy sauce, anchovy sauce, chili powder, and mirin. Mix them well with the fish cakes. Add the diagonally sliced green part of the green onion as well. Stir-fry everything together over medium heat for about 2-3 minutes, ensuring the sauce evenly coats the fish cakes and develops a rich, appetizing red color. The sauce should cling nicely to the fish cakes.

Step 5

Step 6

Finally, turn off the heat and drizzle in 1/2 tablespoon of sesame oil for a nutty finish. You can cover the pan for about a minute to let the sesame oil’s aroma permeate the dish before mixing. This simple step enhances the overall flavor and aroma. Serve hot over a bowl of rice for a truly satisfying meal!
