Main Ingredients

  • 5 hard-boiled eggs
  • 1/4 onion
  • 10cm white part of green onion
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 2 Tbsp olive oil

Seasoning

  • 2 Tbsp plum extract (Maesil Cheong)
  • 1 Tbsp oligosaccharide
  • 1.5 Tbsp oyster sauce
  • 1 Tbsp anchovy sauce (Myeolchi Aekjeot)
  • 1 Tbsp red pepper powder (Gochugaru)
  • 1/2 soju cup water (approx. 50ml)

First, prepare the seasoning mixture. In a bowl, combine the plum extract, oligosaccharide, oyster sauce, anchovy sauce, red pepper powder, and water. Stir well until everything is incorporated. Having the sauce ready makes the cooking process smoother.

Next, prepare the vegetables. Finely mince the onion. Slice the white part of the green onion thinly, or chop it finely for a more diffused flavor. Remove the seeds from the Cheongyang peppers and mince them finely; these add a pleasant spiciness. Smaller pieces of vegetables will absorb the sauce better and provide a nice texture.

Now, get your hard-boiled eggs ready. Using a fork or chopsticks, gently prick the surface of each egg multiple times. This helps the eggs absorb the delicious sauce more effectively and prevents them from cracking during cooking.

It’s time to stir-fry! Gently heat a pan over medium-low heat and add 2 tablespoons of olive oil. Once the oil is warm, add the sliced green onion and stir-fry for about 30 seconds until fragrant, creating a ‘green onion oil’ base. This infuses the dish with a wonderful aroma. Then, add the pricked hard-boiled eggs and stir-fry for about 1 minute.

After lightly stir-frying the eggs, add the minced onion to the pan. Continue to cook over medium-low heat for another 30 seconds, or until the onion begins to turn translucent.

Pour the prepared seasoning sauce into the pan and stir everything together to coat the eggs and vegetables. Reduce the heat to low, cover the pan with a lid, and let it simmer for about 2 to 3 minutes. This simmering process allows the eggs to fully absorb the flavors, enhancing the dish’s taste.
