Spicy and Sweet Stir-fried Duck (Ori Jumulleok)
Easy and Simple Homemade Spicy and Sweet Stir-fried Duck Recipe
For my family who loves meat dishes, I’ve prepared a duck stir-fry using fresh duck meat ordered for early morning delivery. Unlike pre-seasoned smoked duck, fresh duck allows you to control the saltiness and spiciness to your family’s preference, making it a dish I often make. It has a different charm than smoked duck!
Main Ingredients- 500g Fresh Duck Meat
- 1/2 Onion
- 1/4 Carrot
- 1 Green Onion (Scallion)
- 1 Korean Green Chili Pepper (Cheongyang)
- 1 Red Chili Pepper
Seasoning Ingredients- 1 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean Red Chili Paste)
- 2 Tbsp Gochugaru (Korean Red Chili Flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Extract (Plum Syrup)
- 2 Tbsp Cheongju (Rice Wine/Mirin)
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Minced Ginger
- Pinch of Black Pepper
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean Red Chili Paste)
- 2 Tbsp Gochugaru (Korean Red Chili Flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Extract (Plum Syrup)
- 2 Tbsp Cheongju (Rice Wine/Mirin)
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Minced Ginger
- Pinch of Black Pepper
Cooking Instructions
Step 1
Let’s start by making the delicious seasoning sauce. For a deep flavor, add 1 Tbsp of sugar. For spiciness, add 2 Tbsp of gochugaru. To enhance the aroma, add 1 Tbsp of minced garlic and 1/2 Tbsp of minced ginger. To remove any gamey smell and add umami, add 2 Tbsp of cheongju (rice wine), and for sweetness and health benefits, add 2 Tbsp of maesil extract (plum syrup).
Step 2
Next, add 1 Tbsp of soy sauce, which is the base for saltiness, and 1 Tbsp of gochujang for a spicy kick. Finish with a pinch of black pepper.
Step 3
Combine all the prepared seasoning ingredients in a bowl and mix them thoroughly to create the perfect Ori Jumulleok sauce.
Step 4
Place the fresh duck meat in the bowl and pour the prepared sauce over it. Mix well with your hands, ensuring the sauce coats every piece of duck. Let it marinate in the refrigerator for 30 minutes for a deeper flavor. If you’re short on time, you can skip the marinating step, and it will still be delicious.
Step 5
Now, let’s prepare the vegetables. Slice the onion thinly, and cut the carrot into thin half-moon shapes. Slice the green onion diagonally, and thinly slice the Korean green chilies and red chilies diagonally. (Feel free to add chives or other vegetables according to your preference for an even tastier dish!)
Step 6
Heat a pan over high heat. Add the marinated duck meat and stir-fry quickly, being careful not to burn the sauce. Stir-frying on high heat is key to achieve a good sear and prevent overcooking.
Step 7
Once the duck is partially cooked, add the sliced onion and carrot to the pan. Continue to stir-fry until the vegetables are slightly softened and well combined with the duck.
Step 8
Finally, add the diagonally sliced green onion, red chili, and green chili peppers. Stir-fry for another minute until everything is well combined. The spicy aroma will surely make your mouth water. Your delicious Ori Jumulleok is ready!
Step 9
Transfer the finished Ori Jumulleok to a serving plate. Sprinkle with sesame seeds for a final touch and garnish. Serve hot with a bowl of steamed rice for a delightful meal!
