Main Ingredients
  • 1kg fresh duck meat (for stir-frying)
  • 2 onions
  • 1 carrot
  • 5 Korean green chili peppers (Cheongyang peppers)
  • 20 perilla leaves (Kkaennip)

Seasoning Ingredients
  • 4 Tbsp soy sauce
  • 3 Tbsp red chili paste (Gochujang)
  • 4 Tbsp red chili flakes (Gochugaru)
  • 3 Tbsp white sugar (or regular sugar)
  • 4 Tbsp cooking wine (Mirin)
  • 3 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • A pinch of black pepper
  • 3 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 1kg of fresh duck meat, the star of our Ori Jumulleok. If it includes skin, it will add extra richness and flavor.

Step 2

Lightly rinse the duck meat under running water, then pat it thoroughly dry with paper towels to remove any excess moisture and blood. Ensuring the meat is dry is crucial to prevent oil splattering while cooking and to allow the sauce to penetrate better.

Step 3

In a bowl, combine the prepared duck meat with 4 Tbsp soy sauce, 3 Tbsp gochujang, 4 Tbsp gochugaru, 3 Tbsp sugar, 4 Tbsp mirin, 3 Tbsp minced garlic, 1 Tbsp minced ginger, and a pinch of black pepper. Mix well with your hands, ensuring the marinade coats the duck evenly. This step allows the flavors to meld beautifully.

Step 4

Instead of cooking immediately, let the marinated duck sit for a while. While the duck is marinating, you can prepare the vegetables. This resting period allows the flavors to penetrate deeper into the meat, enhancing its taste. We recommend marinating for at least 15 minutes.

Step 5

Now, let’s prepare the vegetables. Wash and get ready 2 onions, 1 carrot, 5 Korean green chili peppers, and 20 perilla leaves.

Step 6

Slice the onions into thick slices. For the carrot, cut the root end into half-moon shapes and the top part (where leaves were attached) into thin, fan-like slices to ensure even cooking and a pleasant texture. Slice the Korean green chili peppers diagonally to help release their spicy flavor as they cook.

Step 7

To bring out the fragrant aroma of the perilla leaves, roll them up tightly and then slice them thinly into shreds. This makes them easier to mix and eat with the stir-fry.

Step 8

Heat a lightly oiled pan over medium-high heat. Add the marinated duck meat and stir-fry until it’s mostly cooked through. Then, add the sliced carrots and continue to stir-fry until they are slightly tender.

Step 9

Once the carrots are partially cooked, add the thickly sliced onions to the pan. Stir-fry until the onions become translucent and sweet.

Step 10

Finally, add the diagonally sliced Korean green chili peppers and stir-fry briefly. Their spiciness will balance the overall flavors. Be careful not to overcook them, as they might lose their fresh bite.

Step 11

When all ingredients are cooked and the sauce has thickened slightly, turn off the heat. Transfer the delicious Ori Jumulleok to a serving plate. Sprinkle with 1 Tbsp toasted sesame seeds and garnish attractively with the shredded perilla leaves.
