Spicy and Sweet Stir-Fried Duck (Ori Jumulleok)
A Delightfully Spicy and Sweet Stir-Fried Duck Dish
This Ori Jumulleok is infused with a perfectly balanced spicy and sweet sauce, offering a wonderfully chewy yet tender texture that makes every bite enjoyable. Adding a variety of fresh vegetables enhances the overall dining experience, making it a delightful dish. It’s incredibly versatile, perfect as a hearty side dish with rice or as a flavorful appetizer.
Main Ingredients- 340g cleaned duck meat
- 6 Korean green chili peppers (kwari gochu)
- 2/3 medium onion
- 4 leaves of spring greens (bomdong)
- 2/3 stalk of green onion
- 1/3 pack of enoki mushrooms
- A small amount of carrot
Sauce Ingredients- 2 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp soy sauce
- 1 Tbsp rice syrup (or corn syrup)
- 1/2 Tbsp sugar
- 1 Tbsp minced garlic
- Pinch of black pepper (freshly ground is best for aroma)
- 1 tsp sesame oil
- 1/2 tsp sesame seeds
- 2 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp soy sauce
- 1 Tbsp rice syrup (or corn syrup)
- 1/2 Tbsp sugar
- 1 Tbsp minced garlic
- Pinch of black pepper (freshly ground is best for aroma)
- 1 tsp sesame oil
- 1/2 tsp sesame seeds
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion into fine julienne strips. Trim the base of the enoki mushrooms, separate the strands, and set aside. Slice the green onions and Korean green chili peppers diagonally. Julienne the carrot thinly. Wash the spring greens thoroughly, tear them into bite-sized pieces, and gently pat them dry.
Step 2
In a bowl, combine the duck meat with all the sauce ingredients except for the sesame oil and sesame seeds (gochugaru, soy sauce, rice syrup, sugar, minced garlic, and black pepper). Gently mix with your hands until the duck is evenly coated with the marinade.
Step 3
Add the julienned onions to the marinated duck and mix again gently. The onions will help retain moisture and allow the flavors to meld beautifully.
Step 4
Heat a frying pan over medium heat. Add the marinated duck and stir-fry for about 4 minutes, or until the duck is lightly browned and the onions release some moisture. Cooking over medium heat initially prevents the duck from becoming tough.
Step 5
Increase the heat to high. Add the carrots and stir-fry for about 30 seconds. Then, add the spring greens and stir-fry for about 1 minute until they slightly wilt. Add the Korean green chili peppers and stir-fry for another 30 seconds. Finally, add the enoki mushrooms and green onions. Continue to stir-fry over high heat for another 1-2 minutes until most of the liquid has evaporated and the ingredients are well combined. Stir-frying quickly over high heat helps maintain the crispness of the vegetables.
Step 6
Finally, drizzle with 1 tsp of sesame oil and sprinkle with 1/2 tsp of sesame seeds. Give it one final mix, and your delicious Ori Jumulleok is ready! Enjoy it immediately while it’s hot.
