  • 1 Tbsp gochugaru (Korean chili flakes)

  • 1 Tbsp maesilcheong (Korean plum syrup) or plum extract
  • 2 Tbsp oligodang (corn syrup) or mulyeot (corn syrup)
  • 1 Tbsp sesame oil
  • 2 drops vinegar (for added zest)
  • Pinch of black pepper
  • Pinch of ginger powder (optional)

Cooking Instructions

Step 1

First, we’ll prepare the dried squid strips to make them softer and more palatable. Place the prepared squid strips in a bowl and rinse them quickly under cold or lukewarm water while gently squeezing. Avoid rinsing for too long, as this can remove all the flavor. A quick rinse of about 10-15 seconds is sufficient. This step helps to reduce the stringy texture and allows the sauce to penetrate better.

Step 2

After rinsing, drain the squid strips in a colander. Then, use kitchen towels to gently press down on the squid strips, removing as much excess moisture as possible. If there’s too much water, the dish can become mushy and less flavorful, so this step is crucial.
