- Minced Garlic 1 tsp
- Fish Sauce (e.g., Tuna or Anchovy) 1 Tbsp
- Plum Extract 1 Tbsp
- Sesame Oil 1 Tbsp
- Sesame Seeds 1 tsp
Cooking Instructions
Step 1
First, prepare 150g of dried shredded squid (Jinmichae). If the pieces are too long, use scissors or a knife to cut them into bite-sized pieces, about 3-4 cm long. This will help the sauce distribute evenly and make them easier to eat.
Step 2
Now, let’s make the delicious sauce! In a bowl, combine 1 Tbsp Gochujang, 1 Tbsp Soy Sauce, 2 Tbsp Cooking Syrup (you can substitute with Oligosaccharide or Corn Syrup for sweetness), 1 tsp Minced Garlic, 1 Tbsp Fish Sauce for umami, 1 Tbsp Plum Extract for a sweet and tangy flavor, and 1 Tbsp Sesame Oil for a nutty aroma. Stir everything well with a spoon until the sauce is smooth and well combined.
Step 3
Pour the prepared sauce into a wide pan or wok and bring it to a simmer over medium heat. Once the sauce starts bubbling, reduce the heat slightly and let it cook until the edges just begin to stick slightly. Be careful not to burn it, as it can cook quickly. Simmering the sauce beforehand will enhance its flavor depth.
Step 4
Add the prepared dried shredded squid to the simmering sauce. Using a spatula or spoon, gently toss the squid to ensure it’s coated evenly with the sauce. Be careful not to break the squid pieces as you mix.
Step 5
Continue to stir-fry for another 1-2 minutes until the sauce is well absorbed by the squid, and your delicious stir-fried dried shredded squid with gochujang is ready. To prevent the sauce from becoming too thick, transfer the dish to a serving plate immediately after turning off the heat, as residual heat will continue to cook it.
Step 6
Finally, sprinkle 1 tsp of sesame seeds over the dish for a beautiful presentation and an extra nutty flavor. This dish is absolutely delicious served with a bowl of warm rice!
