When you’re short on side dishes, dried seafood like ‘Jinmichae’ makes for a satisfying and long-lasting option. This recipe introduces a quick and easy side dish made with Jinmichae that you can prepare in no time.
Main Ingredients- 1 handful Dried Shredded Squid (Jinmichae) or Macbanseok Dried Squid (approx. 50g)
- A sprinkle of toasted sesame seeds
Seasoning Ingredients- 2/3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce for soup)
- 1 Tbsp Mulyeot (corn syrup) or Oligodang (oligosaccharide)
- 1/2 Tbsp minced garlic
- 1/3 Tbsp Gochugaru (Korean chili flakes)
- 2/3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce for soup)
- 1 Tbsp Mulyeot (corn syrup) or Oligodang (oligosaccharide)
- 1/2 Tbsp minced garlic
- 1/3 Tbsp Gochugaru (Korean chili flakes)
Cooking Instructions
Step 1
First, prepare your Dried Shredded Squid (Jinmichae) or Macbanseok Dried Squid. If it’s too tough, lightly rinse it under water to slightly moisten it. Then, tear it into bite-sized pieces (about 5-7 cm) with your hands or cut it. This helps the seasoning to penetrate better and results in a softer texture.
Step 2
In a small pot or pan, combine all the seasoning ingredients: Gochujang, Jin Ganjang, Mulyeot, minced garlic, and Gochugaru. Mix them well.
Step 3
Over low heat, gently stir the seasoning ingredients until they are well combined and slightly warmed. Be careful not to burn the mixture. Warming the seasoning enhances its flavor.
Step 4
Add all the prepared dried shredded squid to the warmed seasoning mixture.
Step 5
Keeping the heat on low, gently toss the squid with chopsticks or a spatula to coat evenly with the seasoning. Ensure the seasoning is distributed well without clumping. About 2-3 minutes of mixing should be sufficient.
Step 6
Once mixed, let the stir-fried squid cool completely. After cooling, transfer it to an airtight container and sprinkle with toasted sesame seeds. This adds visual appeal and a nutty flavor. Store it in the refrigerator for a delicious side dish that lasts for several days.
