This recipe offers two delicious variations of stir-fried dried shredded squid (Hong Jinmichae or Jinmichae) – one with a savory soy sauce base and another with a spicy and sweet gochujang (Korean chili paste) base. Perfect for a quick side dish to accompany rice or even as a snack!
Main Ingredients- 100g Hong Jinmichae or Jinmichae (choose according to your preference)
Soy Sauce Seasoning- 1 Tbsp Soy Sauce
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- 1 clove Garlic, minced (or 1/2 tsp minced garlic)
- 1 Tbsp Mirin (rice wine)
Gochujang Seasoning- 1 Tbsp Gochujang (Korean chili paste)
- 1 tsp Soy Sauce
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- 1 Tbsp Mirin (rice wine)
- 1 clove Garlic, minced (or 1/2 tsp minced garlic)
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 1 Tbsp Soy Sauce
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- 1 clove Garlic, minced (or 1/2 tsp minced garlic)
- 1 Tbsp Mirin (rice wine)

Cooking Instructions
Step 1
First, prepare your Hong Jinmichae or Jinmichae. Place it in a colander and rinse lightly under running water. After rinsing, let it sit for about 5 minutes to drain excess water. Heat a very small amount of cooking oil in a pan over medium-low heat. Stir-fry the squid strips for just 1-2 minutes, until their characteristic fishy smell dissipates and they become slightly chewy. Be careful not to overcook, as they can become tough.
Step 2
In a small bowl, combine the ingredients for the soy sauce seasoning: 1 Tbsp soy sauce, 1 Tbsp oligodang, 1 minced garlic clove, and 1 Tbsp mirin. Add about half of this prepared soy sauce mixture to the pan with the stir-fried squid. Stir quickly to coat the squid evenly with the sauce. Continue to cook over medium-low heat until the sauce reduces and becomes slightly syrupy. Taste and adjust seasoning; if it’s not salty enough, add a tiny bit more soy sauce.

And just like that, your savory Hong Jinmichae stir-fried with soy sauce is ready! It makes a perfect side dish for rice.

Now, let’s make the gochujang version. The method is almost identical to the soy sauce version, just with a different sauce. Prepare the gochujang seasoning by mixing together: 1 Tbsp gochujang, 1 tsp soy sauce, 1 Tbsp oligodang, 1 Tbsp mirin, 1 minced garlic clove, and 1 Tbsp sesame oil.
Step 5
When stir-frying the squid with the gochujang sauce, you need to be a bit more careful than with the soy sauce version, as gochujang can burn easily. Always maintain medium-low heat and keep stirring continuously to prevent the sauce from sticking to the pan or burning. Once the sauce has thickened and coated the squid with a glossy sheen, turn off the heat. Sprinkle with toasted sesame seeds just before serving.
