Ingredients

  • 80g small dried anchovies (use smaller ones for a crispier texture)
  • 10-15 Korean green peppers (adjust quantity to your liking)
  • 1 Tbsp soy sauce
  • 1 Tbsp cooking oil
  • 1 tsp sugar (adjust sweetness as preferred)
  • A pinch of sesame seeds (for added flavor and visual appeal)
  • 1 tsp minced garlic

Cooking Instructions

Step 1

Let’s make a delicious stir-fried anchovy dish with Korean green peppers, a beloved side for everyone from kids to adults.

Step 1

Step 2

First, heat a dry frying pan over medium-low heat. Without adding any oil, gently stir-fry the small dried anchovies. This step removes moisture from the anchovies, making them crispier, and also helps to eliminate any fishy smell. While stir-frying, discard any small crumbs or impurities that fall to the bottom of the pan. Return the toasted anchovies to the pan and add 1 tablespoon of cooking oil. Sauté the anchovies over medium-low heat until they become translucent. This process deepens their flavor significantly.

Step 2

Step 3

Once the anchovies are sufficiently stir-fried, add 1 tablespoon of soy sauce, 1 teaspoon of sugar, and 1 teaspoon of minced garlic to the pan. You can also add a pinch of sesame seeds for extra nutty flavor. Stir everything together quickly over low heat to coat the anchovies evenly with the seasonings. Be careful not to let the seasonings burn.

Step 3

Step 4

Continue to stir-fry until the seasonings are well combined with the anchovies. Wash the Korean green peppers, remove the stems, and cut them into 1-2 cm pieces (you can also leave them whole if you prefer). Add the cut green peppers to the pan and stir-fry them with the anchovies for a short while. Cook them just until they soften slightly but retain some crispness. Overcooking them will make them mushy.

Step 4

Step 5

And there you have it – a perfectly seasoned stir-fried anchovy and Korean green pepper dish, following a golden recipe! This is incredibly delicious served over a bowl of hot, freshly steamed rice. It’s an excellent choice for packed lunches or as a staple side dish, so be sure to give it a try!
