Main Ingredients- 200g clam meat
- 3 cloves garlic, roughly minced
- 1/2 medium onion, roughly chopped
- 1/2 stalk green onion, roughly chopped
- 1 Tbsp cheongju (rice wine)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 0.5 Tbsp sugar
- 1 Tbsp cooking wine (e.g., mirin)
- 1 Tbsp cooking oil
- 1 Tbsp sesame oil
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
Prepare the vegetables: roughly mince the garlic, onion, and green onion. Chopping them coarsely will add a pleasant texture to the stir-fry.
Step 2
Rinse the clam meat thoroughly under running water. A brief rinse in lightly salted water can help remove any fishy odor. After rinsing, drain the clams well using a sieve.
Step 3
Heat a pan over medium heat and add 1 Tbsp of cooking oil. Add the minced garlic, chopped onion, and green onion. Sauté until fragrant, being careful not to burn them. This step helps to release the natural sweetness of the vegetables.
Step 4
Once the vegetables are aromatic, add the drained clam meat to the pan. Stir-fry them together with the vegetables. The clams will release their delicious juices as they cook.
Step 5
Now, add all the seasoning ingredients: 1 Tbsp soy sauce, 1 Tbsp cheongju, 0.5 Tbsp sugar, 1 Tbsp cooking wine, and 1.5 Tbsp gochugaru. Stir well to ensure the clams and vegetables are evenly coated with the sauce, and continue to stir-fry.
Step 6
Finally, season with a pinch of salt and black pepper to taste. Adjust the saltiness if needed. Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and give it a final quick stir for a nutty aroma. Your delicious spicy and sweet clam stir-fry is ready! Serve it generously over a bowl of hot steamed rice for a delightful clam over rice dish.
