Spicy and Sweet Stir-fried Chicken Tender
This is a spicy and sweet stir-fried dish made with tender chicken tenders. The fun comes from mixing in ramen noodles and shredded green onions, creating a delightful experience. It’s a perfect dish for special occasions or a simple appetizer.
Main Ingredients- 12 chicken tenders
- 1 packet ramen noodles
- 2 stalks green onions
Chicken Marinade- 3 Tbsp olive oil
- 1/2 tsp black pepper
- 3 Tbsp olive oil
- 1/2 tsp black pepper
Cooking Instructions
Step 1
First, carefully remove any tendons from the chicken tenders. Tendons can make the meat tough and unpleasant to eat after cooking. Rinse the tenders thoroughly after trimming.
Step 2
After patting the chicken tenders dry, add 3 tablespoons of olive oil and 1/2 teaspoon of black pepper. Mix well to marinate. Letting it sit for about 10 minutes will enhance the flavor.
Step 3
Now, let’s prepare the special spicy and sweet sauce. In a bowl, combine 4 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 3 tablespoons of ketchup, 2 tablespoons of oligosaccharide, and 5 tablespoons of water. Whisk until well combined.
Step 4
Heat 5 tablespoons of cooking oil in a pan over medium-low heat. Add the finely chopped Korean green chili peppers, minced garlic, gochugaru, and the roughly broken dried red chili peppers.
Step 5
Stir-fry the ingredients for about 30 seconds to 1 minute, until fragrant, being careful not to burn the gochugaru. Adjust the heat as needed to prevent burning.
Step 6
Once fragrant, pour the prepared sauce into the pan and stir well to incorporate it with the aromatics. Ensure the flavors meld together nicely.
Step 7
Bring the sauce to a simmer and cook until it starts to thicken slightly. The sauce is now ready. Taste and adjust seasoning if necessary.

Prepare the green onions by slicing them into very thin matchsticks. These will add a crisp texture when mixed with the ramen and chicken.

Rinse the julienned green onions under cold water two or three times. This step removes their pungent flavor, making them refreshingly crisp.

Drain the rinsed green onions thoroughly in a colander. Excess water can dilute the sauce when stir-frying.

Add the marinated chicken tenders to a pan and stir-fry over medium heat until golden brown. It’s important to sear the outside to lock in the juices.

While the chicken is cooking, boil the ramen noodles in a separate pot. Cook them for about 1 minute less than the package instructions, as they will continue to cook when stir-fried. Overcooking can make them mushy.
Step 13
Drain the perfectly cooked ramen noodles in a colander and set aside.

Add the golden-brown chicken tenders to the pan (or a clean pan if preferred) and add about 3-4 tablespoons of the prepared spicy and sweet sauce. Stir-fry, tossing the chicken to coat it evenly with the sauce.
Step 15
Once the chicken tenders are coated with the sauce, add the boiled ramen noodles and the remaining sauce. Stir-fry, tossing as if mixing, to ensure the noodles and chicken are well-coated with the sauce. Finally, add the drained julienned green onions and toss lightly to combine. Serve immediately.
