  • Red chili pepper 1
  • Green chili pepper 1
  • Green onion 1 stalk

Beef Brisket Marinade

  • Soy sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sake (for cooking) 1 Tbsp
  • Cooking wine (Mirin) 2 Tbsp
  • Chili oil 1 Tbsp
  • Oyster sauce 2 Tbsp
  • Sesame seeds 1 Tbsp
  • Pepper, a pinch

Stir-fry Sauce

  • Soy sauce 2 Tbsp
  • Oyster sauce 2 Tbsp
  • Minced garlic 0.5 Tbsp
  • Sugar 1 Tbsp
  • Pepper, a pinch

Cooking Instructions

Step 1

First, trim any unsightly parts from the fresh bean sprouts. Place them in a bowl and gently rinse them by swishing them in water 3-4 times. This helps to remove dirt and any loose skins. (Tip: To easily remove skins, fill the bowl with water, place the bean sprouts in, and gently agitate them.)

Step 1

Step 2

You can stir-fry the beef brisket as is, but if it’s been frozen, lay it on paper towels and gently press to remove any excess blood for a cleaner taste. Once the blood is removed, combine the beef brisket with all the marinade ingredients and mix well. Let it marinate for a short while.

Step 2

Step 3

Heat a pan over medium-low heat and add a little chili oil. Add the sliced green onion and minced garlic, stir-frying until their fragrance is released. Once fragrant, add the marinated beef brisket. Using chopsticks, gently separate the slices as they cook. Stir-fry for about 3-5 minutes. Be careful not to overcook, as beef brisket can become tough.

Step 3

Step 4

When the beef brisket is almost cooked, add the oyster sauce and stir quickly to combine. Immediately add all the bean sprouts. Increase the heat to high and stir-fry rapidly, ensuring the bean sprouts remain crisp – this is the key!

Step 4

Step 5

Add the julienned red and green chili peppers for color and stir-fry briefly. Finally, sprinkle generously with sesame seeds and a pinch of pepper to finish. (Tip: You can add a little sesame oil if you like, but it’s often omitted to let the chili oil’s flavor shine.)

Step 5

Step 6

Transfer the well-stir-fried beef brisket and bean sprouts to a serving plate. Sprinkle with a bit more sesame seeds for a beautiful presentation. Your delicious Stir-fried Beef Brisket with Bean Sprouts is now ready!

Step 6

Step 7

For a spicier flavor, using chili oil for stir-frying is recommended. However, if you’re cooking for children or prefer a milder taste, you can use regular cooking oil instead of chili oil, or stir-fry the beef brisket first without chili oil before adding the sauces.
