Main Ingredients

  • 1 pack Stir-fried Baby Octopus Noodles
  • 1 handful Bean Sprouts (approx. 50g)
  • 5 perilla leaves
  • 1/4 Onion
  • 1 Tbsp Sesame Oil

For Finishing (Optional)

  • 1 bowl Cooked Rice
  • A pinch of Roasted Seaweed Flakes

Cooking Instructions

Step 1

First, rinse the bean sprouts thoroughly under running water. In a pot, add plenty of water and boil the bean sprouts for 3-5 minutes until they are crisp-tender. Then, rinse them in cold water and drain. Thinly slice the onion. Roll the perilla leaves and thinly slice them into about 0.5cm widths. Having your ingredients prepped makes the cooking process much smoother.

Bring a large pot of water to a rolling boil over high heat. Once boiling, add the rice noodles and gently stir to prevent them from sticking. Cook for about 8 minutes. Rice noodles can become mushy more easily than regular wheat noodles, so pay close attention to the cooking time. Drain the cooked noodles in a colander.

In a preheated pan, add the entire contents of the Stir-fried Baby Octopus pack, including the sauce. Pour in 100ml (about 1/2 of a paper cup) of water. Stir-fry over medium heat, starting to cook the baby octopus. It’s important to stir-fry until the spicy sauce evenly coats the ingredients.

Once the baby octopus is partially cooked, add the pre-boiled bean sprouts and the sliced onion to the pan. Stir-fry together for another 2-3 minutes. The bean sprouts will add a crisp texture, and the onion will contribute sweetness and flavor. Ensure all ingredients are well combined.

When the ingredients are well stir-fried, add the cooked rice noodles and the thinly sliced perilla leaves. Toss everything together gently to combine. Adding the perilla leaves at the end helps preserve their fragrant aroma. Make sure all components are evenly coated with the sauce.
