Main Ingredients

  • 200g anchovies (stir-fry type recommended)
  • About 20 Korean green peppers (approx. 150g)
  • 1 Tbsp cooking wine (e.g., Mirin)
  • 1 Tbsp mayonnaise
  • 1 Tbsp sesame oil
  • A little cooking oil

Spicy and Sweet Sauce

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp maesilcheong (Korean plum syrup, or corn syrup)
  • 2 Tbsp mulyeot (corn syrup, or oligodang)
  • 0.5 Tbsp minced garlic
  • 0.5 Tbsp fish sauce (e.g., anchovy sauce or soy sauce for soup)
  • A little toasted sesame seeds

Cooking Instructions

Step 1

First, measure and prepare all the ingredients needed for the dish. Wash the Korean green peppers, remove the stems, and cut them into bite-sized pieces for easy eating.

In a bowl, combine all the ‘Spicy and Sweet Sauce’ ingredients: gochujang, maesilcheong, mulyeot, minced garlic, and fish sauce. Mix them thoroughly with a spoon until a smooth and glossy sauce forms. Add toasted sesame seeds at the end.

Heat a non-stick pan over medium-low heat without adding any oil. Add the anchovies and 1 tablespoon of cooking wine to remove any fishy smell. Stir-fry the anchovies for about 2-3 minutes until they turn a light golden brown color. Be careful not to overcook them, as they can become too hard.

Push the stir-fried anchovies to one side of the pan. Add a little cooking oil to the empty space and stir-fry the chopped Korean green peppers for 1-2 minutes. It’s important to stir-fry them just enough to soften them slightly while keeping them crisp.

Combine the stir-fried Korean green peppers and the cooked anchovies. Gently mix them together so that the ingredients are well combined.

Gently mix the ingredients with your hands, like ‘jomuljomul’ (a gentle massaging motion), to allow the sauce to be well absorbed by the anchovies and peppers. Be careful not to mix too vigorously, as the anchovies might break apart.

Finally, add 1 tablespoon of mayonnaise and mix again with the ‘jomuljomul’ motion. Mayonnaise helps to soften the texture of the anchovies and adds a creamy flavor.
