  • 20 Korean Green Peppers
  • 6 cloves Garlic
  • 1 Red Chili Pepper (optional, for color)

  • 2 Tbsp Soy Sauce
  • 0.5 Tbsp Red Pepper Flakes (Gochugaru)
  • 2 Tbsp Cooking Wine (Mirin)
  • 0.5 Tbsp Sugar
  • 1 Tbsp Corn Syrup (Oligodang)
  • 0.5 Tbsp Toasted Sesame Seeds
  • 0.5 Tbsp Sesame Oil
  • 0.5 Tbsp Cooking Oil

Cooking Instructions

First, wash the Korean green peppers and remove their stems. If they are large, cut them in half lengthwise. Thinly slice the garlic cloves. If using a red chili pepper, remove the stem, seeds, and finely mince it. (This step isn’t shown in the photo but adds great flavor.)

Anchovies stored in the freezer can become soggy and have a fishy odor. Place the frozen anchovies in a dry pan and stir-fry them over low heat to remove moisture and any fishy smell. Once they become crisp, drain them through a sieve to remove any powder, and transfer them to a separate bowl to cool.

In another pan, add a small amount of cooking oil (about 0.5 Tbsp) and stir-fry the Korean green peppers until they are slightly softened. Lightly stir-frying them helps retain their fresh crunchiness. Remove the stir-fried peppers and set them aside.

Now, let’s make the sauce. In a pan, combine all the seasoning ingredients except for the sesame oil: soy sauce, red pepper flakes, cooking wine, sugar, and corn syrup. Bring the mixture to a boil over medium heat. Once it starts bubbling, reduce the heat to low.

Add the pre-stir-fried anchovies, sliced garlic, and the reserved stir-fried Korean green peppers to the simmering sauce. Stir gently to coat everything evenly with the sauce. Finally, drizzle in the sesame oil and mix well. This completes the base for your delicious stir-fried anchovies.
