Spicy and Sweet Stir-Fried Anchovies with Chili Sauce
A Delicious Side Dish: Stir-Fried Anchovies in Chili Sauce using Dried Anchovies
Small and thin dried anchovies are often used for stir-fries, but today we’re making a special side dish that whets your appetite by stir-frying them with a spicy and sweet chili sauce. The anchovies used in the video are from Indonesia and have slightly different characteristics from Korean anchovies. Try making various anchovy side dishes using this recipe! Main Ingredients- 50g small dried anchovies (or dried anchovies)
- 4 Cheongyang peppers (Korean chili peppers)
- 3 Red chili peppers
- 2 Tbsp cooking oil
- 3 Tbsp minced garlic
- 2 Tbsp soy sauce
- 100ml water
- 1 Tbsp anchovy sauce (or sand lance sauce)
Cooking Instructions
Step 1
First, prepare 50g of small dried anchovies (or dried anchovies) for stir-frying. It’s best to use anchovies that have been lightly stir-fried to remove any bitterness and enhance their nutty flavor.
Step 2
Finely mince 4 Cheongyang peppers, which will add a spicy kick. Remove the stems. You can adjust the spiciness by removing the seeds.
Step 3
Finely mince 3 red chili peppers after removing the seeds; these will add color and a subtle sweetness. Using both types of chili peppers will make the dish more vibrant in flavor and appearance.
Step 4
Heat a frying pan over medium-low heat. Add 2 tablespoons of cooking oil and 3 tablespoons of minced garlic. Stir-fry slowly, being careful not to burn the garlic, to create a fragrant garlic oil.
Step 5
Once the garlic is fragrant, add the stir-fried anchovies, minced Cheongyang peppers, and red chili peppers to the pan. Stir-fry together over medium heat for about 2-3 minutes, allowing the anchovies to become nuttier and the flavors of the vegetables to meld.
Step 6
Now it’s time to add the sauce that will bring everything together. Pour 2 tablespoons of soy sauce, 1 tablespoon of anchovy sauce (or sand lance sauce), and 100ml of water into the pan. Stir to combine all the ingredients. Continue to simmer over medium heat for another 2-3 minutes until the sauce thickens and coats the anchovies, resulting in a delicious stir-fried anchovy dish.
