Ingredients

  • 2 cups aged kkakdugi (radish kimchi), about 300g
  • 2 Tbsp perilla oil (deulgireum)
  • 1 Tbsp minced garlic
  • A little cooking oil (for coating the pan)
  • 1.5 Tbsp soy sauce
  • 2 Tbsp sugar (to balance the kimchi’s sourness)
  • 300ml water
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the aged kkakdugi. Measure about 2 cups (approximately 300g) of kkakdugi, including both the radish and the greens. Gently rinse off excess seasoning from the kimchi. Then, dissolve 1 Tbsp of sugar in 300ml of water and soak the kimchi in this sugar water for about 30 minutes. This step helps to mellow the sourness and eliminate any unpleasant fermented odors.

Cut the radish greens from the soaked kkakdugi into bite-sized pieces, about 2-3 cm long. Cutting them to a manageable size will make stir-frying and eating easier.

Slice the radish part of the kkakdugi into strips about 0.5 cm thick. This julienned cut will help the seasoning distribute evenly and improve the texture.

Heat a pan over medium-low heat and add a small amount of cooking oil. Add 1 Tbsp of minced garlic and stir-fry to create garlic-infused oil. Be careful not to burn the garlic; cook until a gentle aroma is released. The garlic aroma will add depth to the flavor.

Once the garlic aroma is prominent, add the prepared kkakdugi to the pan. Stir-fry briefly to combine the kimchi with the garlic oil.

Add 1 Tbsp of sugar while stir-frying the kimchi. Although we soaked it in sugar water, adding more sugar now will further soften the sourness and enhance the savory taste. If you prefer less sweetness, feel free to reduce the amount of sugar.

Add 1.5 Tbsp of soy sauce and stir-fry until the kimchi is well combined with the other ingredients. This will season the dish overall.

Now, add 2 Tbsp of perilla oil to add a rich aroma. Perilla oil has a low smoke point, so it’s best to add it towards the end to preserve its fragrance. Stir-fry until the kimchi becomes tender and develops a glossy sheen.

Finally, garnish with a pinch of sesame seeds to finish. The nutty sesame seeds will add another layer of flavor to your stir-fried aged kimchi. Enjoy this delicious dish with a bowl of warm rice!
