Today, I’ll show you how to make ‘Kodarijjim,’ a dish bursting with spicy and savory flavors that’s perfect for any meal! It’s a fantastic way to enjoy a satisfying dinner that the whole family will love.

Main Ingredients

  • 1 whole Dried Pollack (Kodari)
  • 1 potato
  • 1/4 carrot
  • 1/8 radish (approx. 100g)
  • 1/2 onion
  • 1/8 green onion (scallion)

Seasoning

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1 tsp Gochujang (Korean chili paste)
  • 1 Tbsp Corn syrup (or Oligodang)
  • 1/2 Tbsp Sesame oil
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of sesame seeds
  • 2 cups Rice water (or 2 cups water)

Cooking Instructions

Step 1

Let’s start by preparing the vegetables! Cut the potato, carrot, and radish into large pieces, about 4cm in size. For the radish, you can cut it into half-moon shapes or cubes. Cutting them large helps maintain their texture without them becoming too soft during steaming.

Step 2

Slice the onion into strips and cut the green onion diagonally. The sliced onion will add sweetness as it cooks, enhancing the overall flavor of the Kodarijjim.

Step 3

Clean and prepare the dried pollack. If there are any internal organs attached, remove them. Rinse the fish thoroughly under running water. You can trim off the tail if you prefer.

Step 4

Now, let’s make the delicious seasoning sauce! In 2 cups of rice water (or plain water), combine 1 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp sugar, 1 tsp gochujang, 1 Tbsp corn syrup, and 1/2 Tbsp sesame oil. Mix well. Add a pinch of salt, pepper, and sesame seeds to taste for a flavorful sauce. Your seasoning is ready!

Step 5

In a wide pot, place the prepared carrot, radish, and potato at the bottom. Pour the prepared seasoning sauce generously over them. Bring to a boil over high heat. The vegetables will start cooking first, helping to infuse the Kodari with the savory sauce later on.

Step 6

Once about half of the liquid has evaporated and the vegetables are somewhat tender, arrange the prepared dried pollack on top. Cover the pot and simmer over medium heat for about 10-15 minutes, or until the Kodari is cooked through. When the fish is done, add the sliced onion and diagonally cut green onion. Simmer for another moment. Finally, sprinkle with sesame seeds for a beautiful finish. Your spicy and sweet Kodarijjim is complete! Enjoy it with a warm bowl of rice!
