Cooking Instructions
Step 1
First, prepare the 200g of thinly sliced pork for bulgogi. Before you start cooking, it’s crucial to thoroughly pat dry the pork with paper towels to remove any excess blood. This step is key to preventing a gamey taste and ensuring a clean flavor. Place the drained pork in a bowl.
Step 2
Add all the pork bulgogi marinade ingredients to the bowl with the pork: 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp sugar, 2 Tbsp rice wine, 1.5 Tbsp soy sauce, and 1 tsp black pepper.
Step 3
Knead the ingredients into the pork vigorously with your hands for about 3 minutes. This helps the marinade penetrate the meat evenly. Let the marinated pork rest for 10 minutes.
Step 4
Next, prepare the squid. Take one cleaned squid and cut it into bite-sized pieces or strips. Ensure it’s ready for cooking.
Step 5
In a separate bowl, combine the squid marinade ingredients: 1 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp corn syrup, and 0.5 Tbsp sugar. Add the prepared squid to this marinade.
Step 6
Just like the pork, knead the squid with the marinade for about 3 minutes until well combined. Let the squid marinate for 10 minutes. This short marination will enhance its savory flavor.
Step 7
Now, let’s prepare the vegetables. Slice one onion into thick strips. Cut half a carrot into thin, flat slices. Chop half a green onion into large, diagonal pieces for a pleasant texture and appearance in the final dish.
Step 8
Time to stir-fry! Heat a pan over high heat. Add the marinated pork and cook until it’s fully cooked, ensuring no liquid accumulates. Stir frequently to prevent burning.
Step 9
Once the pork is about 80% cooked, add the sliced onion and carrot to the pan. Continue stir-frying over high heat. Cooking on high heat helps prevent the vegetables from releasing too much moisture, preserving their natural flavors. If you prefer a moister dish, you can reduce the heat to medium.
Step 10
When the onions start to turn translucent and slightly cooked, add the marinated squid to the pan. Be careful not to overcook the squid, as it can become tough.
Step 11
Stir-fry the squid for 2-3 minutes until it becomes plump and glossy. Cooking the pork thoroughly first and then adding the squid ensures that the pork remains tender while the squid is perfectly cooked and delightfully soft. This method yields a superior taste and texture.
Step 12
Once the squid is cooked, add the chopped green onions and stir-fry for another 2-3 minutes. For an enhanced smoky flavor, you can slightly increase the heat towards the end and let the edges caramelize a bit.
Step 13
And there you have it! Delicious Spicy and Sweet Squid and Pork Bulgogi is ready. Serve it over warm rice or enjoy it with a cold beer. It’s a fantastic dish for a family gathering or any special occasion.
