First, thoroughly scrub the crabs with a toothbrush under running water. Then, carefully remove the triangular abdomen flap. Trim off the sharp tips of the claws and remove the innards and the gills. Cleaning the crabs well is key to a fresh, non-fishy taste.

After removing the parts you don’t want, cut the crabs into manageable pieces. Cutting them into quarters makes them easier for everyone, including children, to eat. Rinse them gently again to remove any lingering debris, and then drain them very well. Excess water will dilute the sauce, so ensure they are quite dry.
