  • 250g dried shredded squid (look for thinner strands, often labeled as ‘Ojing-eo Silchae’)

Cooking Instructions

In a wide pan, combine the gochujang (3 Tbsp), soy sauce (1 Tbsp), and water (50ml). Add the cooking oil (1 Tbsp) to complete the sauce ingredients.

Place the pan over medium-high heat. Stir the sauce ingredients well with a spatula or spoon as it heats up. Once the sauce comes to a boil, reduce the heat to medium-low and let it simmer for another 1-2 minutes to deepen the flavors.

Step 3

As soon as the sauce reaches a rolling boil, immediately turn off the heat. While the pan is still warm, stir in the oligosaccharide (4 Tbsp) until fully incorporated. This gentle mixing helps create a glossy glaze.

Step 4

Prepare the dried shredded squid by cutting it into bite-sized pieces. Aim for lengths of about 2-3 inches (5-7 cm).

Step 5

Add the prepared shredded squid to the pan with the sauce. Drizzle in the sesame oil (1 Tbsp). Gently mix everything together using your hands or a spatula, ensuring each strand is coated with the delicious glaze. Be careful not to break the squid pieces.
