Main Ingredients- 400g fresh scallions

Cooking Instructions
Step 1
First, bring a generous pot of water to a rolling boil. Once the water is boiling, add 1/2 Tbsp of salt. Adding salt helps to maintain the crisp texture of the scallions and remove any unpleasant odors.

Dip only the white root ends of the scallions into the boiling water for 10 seconds, then add the rest of the scallions and blanch for a total of 20 seconds. Be careful not to over-blanch, as they can become too soft. This step helps to preserve the fresh aroma and crisp texture of the scallions.

Immediately after blanching, rinse the scallions under cold running water to cool them down quickly. This will help them stay crisp and retain their vibrant green color.
