  • 2 bunches of fresh young scallions (about 600g)
  • 2/3 cup fish sauce (anchovy or sand lance, approx. 120ml)
  • 1/2 cup fine gochugaru (Korean chili flakes, approx. 50g)
  • 2/3 cup plum extract or syrup (approx. 120ml)
  • 1/3 cup minced garlic (approx. 40g)

Cooking Instructions

Step 1

Let’s make some delicious scallion kimchi, known for its wonderfully pungent flavor! It’s surprisingly easy to make at home with just fresh scallions.

Step 2

First, trim the root ends of the fresh scallions slightly. If there’s any dirt, wash them thoroughly under running water. After washing, place the scallions in a colander to drain completely. This step is crucial to prevent the kimchi from becoming mushy and to ensure it lasts longer. Now, pour 2/3 cup of fish sauce evenly over the root parts of the scallions. Let them marinate for at least 10 minutes, allowing the roots to absorb the flavor first. Marinating the roots this way helps to soften the entire scallion and allows the seasoning to penetrate better.

While the scallions are marinating, let’s prepare the seasoning paste. In a bowl, combine 1/2 cup of fine gochugaru, 2/3 cup of sweet plum extract, and a generous 1/3 cup of minced garlic. Mix them well. Once the paste is ready, gently take out the marinated scallions and add them to the seasoning. Carefully toss and coat the scallions from top to bottom, turning them gently. Unlike napa cabbage kimchi, which is mixed vigorously, it’s important to fold and coat the scallions delicately here. This method helps maintain the scallions’ crisp texture and makes it easier to serve portions neatly later on.
