Main Ingredients
  • 150g bean sprouts
  • 1/2 onion
  • 3 sausages (adjust to your preference)
  • 1 green onion

Cooking Instructions

Step 1

First, prepare the vegetables for the stew. Thinly slice half an onion into strips. If they are too thin, they might break apart during cooking.

Step 2

Cut the green onion into large, roughly 3-4 cm pieces. The green onion’s aroma will add depth to the dish.

Step 3

Slice the sausages into bite-sized pieces according to your preference. You can cut them into rounds or lengthwise and then into halves. Shape them as you like.

Step 4

Heat a frying pan over medium heat with a little cooking oil. Add the sliced sausages and pan-fry them until golden brown on both sides to bring out their flavor.

Step 5

Once the sausages are nicely browned, add 1/2 cup of water (approx. 100ml) and bring it to a gentle boil. This step helps to meld the savory juices and delicious fat rendered from the sausages into the liquid, enhancing the overall taste.

Step 6

When the water starts boiling, add the prepared bean sprouts, sliced onion, and cut green onion. Let them cook until the vegetables are slightly tender.

Step 7

Now it’s time to add the seasoning. Mix in 2 Tbsp gochujang, 2 Tbsp gochugaru, and 1 Tbsp sugar. Gently stir everything together with a spatula or spoon until well combined.

Step 8

Next, add 1/3 cup soy sauce and 1 Tbsp minced garlic. Stir again to ensure all the ingredients are evenly coated with the sauce. You’ll start to smell the delicious aroma!

Step 9

Finally, let’s adjust the thickness of the stew. In a small bowl, mix 2 Tbsp water with 1 Tbsp cornstarch (or potato starch) until smooth, forming a slurry. Gradually pour this starch mixture into the stew while stirring, until you reach your desired consistency. Be careful not to add too much, or it might become too thick, like porridge.

Step 10

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil for added fragrance. This completes your delicious Sausage and Bean Sprout Stew. Enjoy your meal!
