Main Ingredients- 1 pack Ramen noodles (dried or fresh)
- 15-20 Tteokbokki rice cakes (rice or wheat cakes)
- 2 sheets Square fish cakes
- 2-3 leaves Cabbage
- 1 stalk Green onion
- 2 Hard-boiled eggs (optional)
Spicy and Sweet Sauce- 1.5 Tbsp Gochujang (Korean chili paste, heaped)
- 1 Tbsp Gochugaru (Korean chili powder, adjust for desired spiciness)
- 2 Tbsp Jin Ganjang (Soy sauce, for umami)
- 1 Tbsp Sugar (adjust sweetness)
- 2 Tbsp Oligodang (Corn syrup or rice syrup, for glaze and sweetness)
- 3 cups (600ml) Water or Anchovy-Kelp Broth (for deeper flavor)
- 1.5 Tbsp Gochujang (Korean chili paste, heaped)
- 1 Tbsp Gochugaru (Korean chili powder, adjust for desired spiciness)
- 2 Tbsp Jin Ganjang (Soy sauce, for umami)
- 1 Tbsp Sugar (adjust sweetness)
- 2 Tbsp Oligodang (Corn syrup or rice syrup, for glaze and sweetness)
- 3 cups (600ml) Water or Anchovy-Kelp Broth (for deeper flavor)
Cooking Instructions
Step 1
Prepare the ramen noodles according to your preference. If you prefer a cleaner taste, blanch them in boiling water for 1-2 minutes, then rinse under cold water and drain. Separate the tteokbokki rice cakes if they are stuck together. Rice cakes offer a softer texture, while wheat cakes provide a chewier bite.
Step 2
Prepare the additional ingredients. Slice the green onion diagonally for a nice aroma, and thinly slice the cabbage into thick shreds for a pleasant texture. Cut the fish cakes into your desired shapes and sizes.
Step 3
In a pot, combine 3 cups (600ml) of water or broth with 1.5 Tbsp gochujang, 1 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp sugar, and 2 Tbsp oligodang. Stir well and bring to a boil over medium heat to allow the flavors to meld.
Step 4
Once the sauce begins to simmer, add the tteokbokki rice cakes. Let them cook for 2-3 minutes until they become soft and absorb the sauce.
Step 5
When the rice cakes are partially cooked, add the cabbage. The natural sweetness from the cabbage will add depth to the sauce, and it also contributes a nice texture when eaten. Continue to simmer for another 3-4 minutes with the rice cakes.
Step 6
Once the rice cakes and cabbage are mostly cooked, add the fish cakes. Fish cakes can become mushy if overcooked, so it’s best to add them when the other ingredients are nearly done.
Step 7
If you have hard-boiled eggs, add them now. The eggs will soak up the delicious sauce, making them even tastier.
Step 8
When all the ingredients are well combined and simmering, add the prepared ramen noodles. Gently loosen the noodles so they are coated in the sauce along with the other ingredients, and cook until the noodles are done.
Step 9
Finally, add the sliced green onions and cook for another 1-2 minutes until the ramen noodles are fully cooked. Your delicious Rabokki is ready! Enjoy it immediately while it’s hot.
