I always have pork in my fridge, and this recipe works perfectly no matter the cut. The savory and slightly sweet sauce is incredibly addictive and pairs perfectly with rice. Main Ingredients

  • Pork (any cut you prefer, approx. 300g)
  • Onion (1/2)
  • Shiitake Mushrooms (2-3)
  • Green Onion (1/2 stalk)

Seasoning

  • Gochujang (Korean chili paste) (3 Tbsp)
  • Mirin (rice wine) (1.5 Tbsp)
  • Maesilcheong (plum extract) (2.5 Tbsp)
  • Oligodang (corn syrup) (1 Tbsp)
  • Minced Garlic (1.5 Tbsp)
  • Soy Sauce (1.5 Tbsp)
  • Gochugaru (Korean chili flakes) (1 Tbsp)
  • Black Pepper (1 tsp)
  • Sesame Seeds (1.5 Tbsp)

Cooking Instructions

Step 1

First, cut the pork into bite-sized pieces, about 1-2cm thick. If you’re using pork belly, about 3 strips would be a good amount. In a bowl, add the cut pork, 1.5 Tbsp minced garlic, 1.5 Tbsp mirin, and 1 tsp black pepper. Marinate for about 5 minutes by gently massaging the ingredients into the pork. This step helps to remove any gamey odor and tenderize the meat.

Next, prepare the vegetables. Slice the green onion diagonally and thinly slice the onion. Remove the stems from the shiitake mushrooms and slice them. Add the marinated pork and all the prepared vegetables to a large bowl. Then, add all the seasoning ingredients: 3 Tbsp gochujang, 2.5 Tbsp maesilcheong, 1 Tbsp oligodang, and 1.5 Tbsp soy sauce. Gently mix everything with your hands until the pork and vegetables are well coated with the sauce. Marinating further will enhance the flavors.

Heat a pan over medium-high heat. Add the marinated pork and vegetables to the hot pan. Stir-fry quickly, breaking up the meat with chopsticks or a spatula to prevent clumping. It’s important to stir-fry briskly to avoid the sauce sticking to the pan.

This is the final step! When the pork is almost cooked through, add 1 Tbsp gochugaru for a vibrant color and mix well. Finally, sprinkle 1.5 Tbsp sesame seeds over the top for a nutty aroma, completing your delicious Jeyuk Bokkeum. Serve hot with steamed rice for a truly satisfying meal!
