Spicy and Sweet Pork Shoulder and Squid Stir-fry Rice Bowl
Clean Out the Fridge! A Spicy & Sweet Rice Bowl Recipe with Pork Shoulder and Squid
Hello everyone! Today, we’re going to make a wonderful meal using ingredients tucked away in the fridge. This ‘Spicy and Sweet Pork Shoulder and Squid Stir-fry Rice Bowl’ features squid and pork shoulder as the main ingredients, stir-fried in a savory and sweet sauce, then served over rice. It’s a dish that offers rich flavors with simple ingredients and is perfect as a side dish or a hearty meal. The chewy squid and tender pork shoulder combine with the spicy sauce to whet your appetite, while the crisp vegetables add delightful texture.
Main Ingredients- 1/2 squid, cleaned and cut into bite-sized pieces
- 1 cup pork shoulder (approx. 150-200g)
- 1/2 cup zucchini, thinly sliced
- 1 cup green onion, cut diagonally
- A small amount of carrot, thinly julienned for color
- 1/2 onion, thinly sliced
Cooking Instructions
Step 1
First, cut the squid and pork shoulder into bite-sized pieces. Make the squid pieces not too small, and the pork shoulder into pieces that are easy to chew. (You can also slice them long and thin as shown in the picture.)
Step 2
Slice the zucchini, onion, carrot, and green onion into strips. The carrot is mainly for color, so you don’t need a lot. Cut the green onion diagonally into large pieces as it will be added while stir-frying.
Step 3
Heat a frying pan, add the pork shoulder first, and then add all the seasoning ingredients (1 Tbsp soy sauce, 1 Tbsp gochujang, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp soju, 1 Tbsp corn syrup). Mix everything well with your hands to ensure the pork is evenly coated with the sauce. Let it marinate for a moment.
Step 4
Let the marinated pork sit for about 5 minutes. This allows the sauce to penetrate the meat, making it more tender and flavorful.
Step 5
Now, heat the frying pan over medium heat and start stir-frying the marinated pork. Once the pork begins to cook, continue to stir-fry for about 10 minutes. During this time, add the julienned carrots and green onions first and stir-fry them together to add flavor and texture.
Step 6
When the pork is almost fully cooked, add the prepared squid. Squid cooks very quickly and can become tough if overcooked, so stir-fry it over high heat for a short time. Cook just until the squid turns opaque.
Step 7
Finally, add the sliced onion and zucchini and stir-fry them together. Cook just until the vegetables soften slightly. Make sure to mix all the ingredients thoroughly.
Step 8
Once all the ingredients are stir-fried, just before turning off the heat, drizzle in 1 Tbsp of sesame oil for glossiness and a nutty aroma. This completes the delicious ‘Spicy and Sweet Pork Shoulder and Squid Stir-fry’, perfect for serving over rice as a donburi!
Step 9
Serve a generous portion of warm rice in a bowl, and top it with the finished pork shoulder and squid stir-fry. Add some boiled bean sprouts to gently mellow the spiciness of the stir-fry, and top with torn seasoned seaweed (gim) for extra flavor. (The bean sprouts were taken from a pot of soup I was making on the side to accompany the rice bowl. They are optional but highly recommended!)
Step 10
Don’t discard the water used to boil the bean sprouts! You can make a simple bean sprout soup to enjoy alongside your rice bowl. The spicy stir-fry and the mild bean sprout soup make a perfect pairing. Enjoy a hearty and delicious meal!
