Pork Neck Jumulleok Recipe: The Secret to a Delicious Gochujang Marinade

Main Ingredients
- 600g pork neck
- 1 onion
- 1 green onion
- A pinch of sesame seeds (for garnish)
Spicy & Sweet Marinade (Measurement: Tbsp)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp mirin (or cooking wine)
- 1 Tbsp minced garlic
- Pinch of black pepper (about 20 grinds)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp mirin (or cooking wine)
- 1 Tbsp minced garlic
- Pinch of black pepper (about 20 grinds)
Cooking Instructions
Step 1
Gently pat the pork neck with paper towels to remove any excess blood. If there’s too much fat, trim it with a knife and then cut the meat into bite-sized pieces.
Step 2
Peel and thinly slice the onion into strips about 0.5 cm thick. Wash the green onion, then cut it diagonally into large pieces, about 4-5 cm long.
Step 3
Place the cut pork neck into a large bowl. Add 4 tablespoons of gochujang and 2 tablespoons of gochugaru, ensuring the meat is evenly coated.

Next, add 2 tablespoons of sugar, 2 tablespoons of mirin, and 2 tablespoons of soy sauce. Stir in 1 tablespoon of minced garlic and grind about 20 twists of black pepper over the mixture for added flavor.

Thoroughly mix all the marinade ingredients with the pork using your hands. ‘Jumulleok’ literally means to knead or massage, so really work the marinade into the meat to ensure it’s well-seasoned.

Heat a pan over medium heat. Add all the marinated pork. Let one side cook until the marinade thickens and then flip the meat. Keep turning the meat frequently to prevent burning and to achieve a deep, appetizing sear on all sides.

Once the pork is mostly cooked and nicely browned, reduce the heat to low, cover the pan, and let it cook for another 2-3 minutes. This ensures the meat is tender and juicy inside while the flavors meld together.
Step 8
Finally, add the sliced onions and green onions to the pan. Stir-fry over high heat for a short time until the onions become translucent. Turn off the heat, transfer the delicious pork neck jumulleok to a serving plate, and sprinkle with sesame seeds. Enjoy your perfectly cooked dish!
