Spicy and Sweet Pork Belly Kimchi Stir-fry (Samgyeopsal Kimchi Jeyuk Bokkeum)
Delicious Pork Belly Kimchi Jeyuk Bokkeum Recipe using Frozen Pork Belly (Baek Jong-won Style)

Main Ingredients- 450g pork belly, cut into bite-sized pieces
- 150g napa kimchi, chopped into appropriate sizes
- 1 cheongyang chili pepper, thinly sliced
- 1 green onion, cut into 5cm lengths and then halved or thirds lengthwise
Cooking Instructions
Step 1
First, cut the pork belly into bite-sized pieces, about 2-3 cm in size. The cheongyang chili pepper adds a spicy kick, so remove the seeds and thinly slice it. Cut the green onion into approximately 5cm lengths and then cut them lengthwise into 2 or 3 strips to help the sauce penetrate better.
Step 2
Chop the well-fermented kimchi into bite-sized pieces, similar to the size of the pork belly. Using sour kimchi will add a deeper, richer flavor.
Step 3
Now, heat a pan over medium heat and add the cut pork belly. You don’t need to add any cooking oil, as the pork belly will render its own fat. Season the pork belly with a pinch of salt and a pinch of black pepper for initial flavor.
Step 4
Once the pork belly starts to turn golden brown, add half a tablespoon of sugar and 1 tablespoon of soy sauce. Stir well as it cooks to evenly coat the pork belly, adding shine and savory flavor. Be mindful of the heat to prevent the soy sauce from burning.
Step 5
When the pork belly is deliciously cooked, add the prepared kimchi. Stir in 2 tablespoons of gochugaru and the remaining half tablespoon of sugar. Stir-fry until the kimchi is softened and the sauce is well combined. Stir occasionally to prevent the kimchi from sticking to the pan.
Step 6
Finally, add the prepared green onions and cheongyang chili peppers. Stir-fry over high heat for about 2-3 minutes. Stir-frying them briefly will keep them slightly crisp and fresh. Transfer the finished pork belly kimchi stir-fry to a serving plate, sprinkle with sesame seeds, and enjoy your delicious meal!
