Main Ingredients

  • Pork belly or neck 300g (cut into bite-sized pieces)
  • 1 Squid (cleaned and prepared)
  • 1/2 Onion (sliced)
  • 1/5 Carrot (thinly sliced)
  • 1 Green chili pepper (optional, finely chopped)
  • 1 Tbsp minced garlic
  • A pinch of toasted sesame seeds (for garnish)

Spicy & Sweet Sauce

  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Corn syrup or Oligosaccharide (for shine and sweetness)
  • 0.5 Tbsp Sugar (adjust sweetness to taste)
  • A pinch of Black pepper (to remove pork odor)
  • 1 Tbsp Sesame oil (for nutty aroma)
  • 1 Tbsp Soy sauce (for umami)
  • 1 Tbsp Minced garlic (for enhanced flavor)

Cooking Instructions

Step 1

Heat a wide pan over medium heat, add a little cooking oil, and sauté 1 Tbsp of minced garlic until fragrant. Tip: Using sliced garlic cloves will yield a richer garlic aroma.

Once the garlic starts to turn golden brown, add the pork cut into bite-sized pieces (about 3-4 cm). Sprinkle a pinch of black pepper over the pork to eliminate any gamey smell. Stir-fry the pork until it’s about 70% cooked. Stir occasionally to prevent sticking to the pan.

When the pork is about 70% done, add the thinly sliced carrots and stir-fry them together until they begin to soften slightly.

Once the carrots are partially cooked, add the sliced onion and finely chopped green chili pepper. Stir-fry until the onions become translucent. Tip: If you prefer less spice, you can omit the green chili pepper or reduce the amount.

When the carrots and onions are well-cooked, add the prepared squid. It’s best to cut the squid into bite-sized pieces rather than too small for a pleasant chewy texture. Tip: Squid can become tough if overcooked, so add it towards the end and cook only briefly.

Now it’s time to add the sauce ingredients. First, add 1.5 Tbsp of gochujang and a pinch of black pepper, and mix well.

Next, add 1 Tbsp of corn syrup (or oligosaccharide) for shine and sweetness, and 0.5 Tbsp of sugar (adjust sweetness to your liking). Tip: If you don’t have corn syrup, you can use 2 Tbsp of sugar instead to achieve the desired sweetness.

Drizzle in 1 Tbsp of sesame oil for a nutty aroma.

Finally, add 1 Tbsp of gochugaru and 1 Tbsp of soy sauce for umami. Add all the sauce ingredients.

With all ingredients and sauce added, stir-fry everything vigorously over high heat until well combined. Tip: Stir-frying quickly over high heat prevents the squid from becoming tough and keeps the vegetables crisp. Once everything is cooked through and the sauce is evenly distributed, turn off the heat, sprinkle with toasted sesame seeds, and serve. Your delicious O-Sam Bulgogi is ready!
